This girl and worked together for the past year and hung out alot. We are good friends, yet she is uncomfortable talking about our dating experiences with other people. She doesn't like to hear about my dates and she tells me she isn't seeing anyone even though I know she is. Why? Is she secretly hoping I ask her out??

She likes you... in somehow interested in you. She knows your person, your behaviour in handling things therefore i feel that she wants to be your Miss Right. Not hoping you to ask her out but she wants you to notice her more.
Hoping one day you will eventually fall in love with her. I think she is shy to tell you in person that she has a special feeling of you as most girls are afraid to take the 1st step to approach a guy cos what if the guy turns down on her?
Huh, i guess you may consider whether to like her or not, If you do not want to start a relationship with her you can tell a white lie that you are seeing someone else or to promp her that you are treating her like a sister/buddy.
Don't let her have any thinking that there is chance for her. In my view, i think this is best solution for both of you.

Could be. She might not want to hear about your experiences out of jealousy, and she might say that she's not seeing anyone because she wants to remain available to you. Tricky creatures we are.
