A granita is actually "raked" with a fork while it is freezing. Use a metal pan and every 1/2 hour, you rake the ice to break up the crystals and give it that light texture. I think you might be referring to a sorbet, which is simple syrup and flavoring.... This is turned in a ice cream maker or sorbet machine

GRANITA AL LIMONE
Lemon Ice

2 cups lemon juice
1 cup water
2 tbs. sugar

Blend all the ingredients, making sure that the sugar is completely dissolved. Strain the syrup into a flat pan and place in freezer. Scrape occasionally while freezing and churn before serving.
