* 5 pounds red potatoes
* 6 eggs
* 2 cups mayonnaise
* 1 onion, diced
* 2 green onions, thinly sliced
* 1 small green bell pepper, seeded and diced
* 3 stalks celery, thinly sliced
* 2 teaspoons salt
* 1 teaspoon ground black pepper
DIRECTIONS:
1. Bring a large pot of water to a boil. Add potatoes, and cook for 15 to 20 minutes, or until tender but still firm. Drain, cool and cut into cubes.
2. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
3. In a large bowl, combine chopped potatoes and eggs. Mix together mayonnaise, chopped onion, green onion, green pepper, and celery. Season with salt and pepper, then mix well. Cover, and refrigerate for several hours or overnight.

A simple one:
German potato salad:
Boil several good sized potatoes in salted water...
Fry some bacon, and crumble it. Keep the fat.
Chop up an onion, and 2 or 3 sweet pickles.
Dice the cooked potatoes. Place in a large bowl, add the bacon, pickles and onion. Warm the bacon fat, add a half glass of vinegar, a couple of tablespoons of cooking oil, and a tablespoon of sugar, stir until the sugar has melted. Pour over the potatoes serve warm with german sausages (frankfurt, bratwurst, bockwurst, etc...whichever you prefer).
A good potato salad recipe from Spain...
Boil and dice some potatoes.
Allow to cool off and place in a large bowl.
Add a small tin of peas, another of baby or diced carrots. a small tin of chopped pimentos, some tuna in olive oil (I usually use 2 small tins), 3 hard boiled eggs (diced also) and some pitted olives.
Mix in enough mayonnaise to cover. Serve chilled.
You can also add a chopped raw onion if you like, and some shrimp (prawns).
In Spain this is called "ensaladilla rusa".

Simple Potatoe Salad:
5lbs of potatoes
5 hard boiled eggs
5 celery stalk spears
1 medium onion
5 heaping tablespoons of mayo or salad dressing
1tablespoon suger
1/4 cup milk
salt and pepper to taste
Wash and boil potaoes
boil eggs until hard
cool potatoes
peal potatoes and eggs
dice up potatoes ,celery and eggs in large bowl
add the other ingredients and stir gently

My Mom's method is easy, good, and inexpensive: Boil the potatoes until they are still firm, but cooked though.You can use whatever kind you like, some people like the little new potatoes, with part of the skin decorously removed. I like plain peeled red potatoes. Dice sweet onions, slice some boiled eggs, use Miracle whip as the dressing. Some people put a little prepared mustard in it, I do not care for that. Can also add celery, or sweet pickles cut up if you like. Enjoy

Peel, cube & boil about 6-8 potatoes
4 boiled eggs ( I boil the eggs with the potatoes)
Tops of 2 green onions (dark green part only)
3-4 Tsp Mayo ( use as much or as little as you like)
salt & pepper
Drain potatoes then add chopped eggs, onions & mayo. Mix lightly. Salt & papper to taste.
Sometime I add green olives or sweet pickle relish, but mostly I like to keep it simple. Enjoy

4 lbs red potatoes

1/2 teaspoon celery seeds
Cook potatoes in boiling water to cover 40 minutes or until tender; drain and cool.
Peel potatoes and cut into 1 inch pieces.
Chop egg whites.
Stir together potato, egg whites, 1/2 t. salt and green onions.
Mash egg yolks;
add remaining 1/2 t. salt, mayo, pickle relish, mustard, pepper, and celery seed; stirring until well blended.
Gently stir into potato mixture.
Cover and chill 2 hours.

cut 8 medium potatoes to thumb size, boil for 30 mins. drain, add 3 tsp fine chopped onion, 3 tsp pickle relish, 1/4 cup of mustard, 2 tsp mayo.... stir and let set in fridge until ready to serve...
