Oatmeal is soft and we know its great food for a diabetic
apple sauce
cottage cheese
soup broth
tomatoe soup
diabetic ice cream
sugar free pudding
milk over smashed banana
gravey over mashed potatoes
pureed foods, such as any fruit

Time to get a blender...
Fruits - in blender(mix with fiber powder from pharmacy).
veggies - in blender
oatmeal, pasta(blender), rice(brown in blender)
bean paste, tofu
Anything fiberous or meaty you can stomach - blender
Whatever you do, remember to excercise. Unless you are type 1 diabetes, you can literally eat a bowl of sugar and not be affected as long as you jog right afterwards for a few hours.
Ps. Don't eat a bowl of sugar.

creamy soup (or chunky soup blended), mashed potatoes and carrots, smoothie with low sugar fruit sucs as strawberry, oatmeal, multi-grain hot cereal, yogourt, egg salad, scrambled eggs, bread dipped in soup/broth, miso soup, custard, purred chicken/meat, watered down and blended tuna or chicken or ham salad, sugar-free pudding, guacamole, applesauce, cottage cheese, hummus, bean dip.
