Not sure why there is a + and a - choice on bank DVD's. Will that affect trying to make copies.

+ and - are just different formats that are available. sort of like hd-dvd and blue ray or beta and vhs. when you burn a dvd-video disc (regardless of format) you create a playable dvd like any you buy in the store. when you copy that dvd (making a video_ts folder) you can burn that folder and make a playable disc on any format of dvd.
the only issue to be wary of is to make sure that your particular dvd burner can read and burn to both formats. most of newer burner will except when it comes to dual layer. pc burners generally back the +r dual layer (more widely available) and mac burners sometimes only burn to -r dual layer.
but you really should have no issues as long as you're making copies.

It will work fine if you copy, there's - and + cos in the beginning no one could agree which one to use, but all DVD players with accept both.

Nero is the way to copy for coping DVDs
