Im looking to make a sweet potato pie. ***NOT A PUMPKIN PIE***. Im tryin to make one like my grandma used to make.

INGREDIENTS:

* 3 sweet potatoes
* 1/2 cup butter, softened
* 1 tablespoon vanilla extract
(I added 1 1/2 tsp of cinnamon)
* 2 1/2 cups white sugar
* 1/2 teaspoon ground nutmeg
* 4 eggs, beaten
* 3/4 cup evaporated milk
* 2 (9 in.) unbaked pie crusts

DIRECTIONS:

1. Bring a large pot of water to a boil. Add sweet potatoes and cook until tender but still firm, about 30 minutes. Drain, cool, peel and mash. Preheat oven to 350 degrees F (175 degrees C).

2. In a large bowl, combine sweet potatoes, butter, sugar, vanilla and nutmeg. In a small bowl, whisk together the eggs and milk and blend into the sweet potato mixture.

3. Pour into pie shells and bake in preheated oven for 60 minutes, or until done.


No Crust Sweet Potato Pie Crisp
Preparation: Approx. 40 minutes Cook time: 50 minutes
What you’ll need:

Potato Masher

Preheat oven to 350F

Sweet Potato Pie Recipes(Filling):

Ingredients:


2 Med. Sweet Potatoes
3 Tbsp. Flour
½ c. Sugar
¼ c. Packed Brown Sugar
½ Stick of Butter
¼ c. Oil
1 ½ tsp. Vanilla
1 tsp. Baking Powder
½ tsp. Salt
1 Large Egg
¼ c. Milk
4 oz. Cream Cheese
Peel and boil sweet potatoes until tender. Mash until smooth, all lumps should be gone (semi-creamy) and set aside. Combine all other ingredients into a medium mixing bowl and set mixer at medium speed. Once mixture is smooth textured, add mashed sweet potatoes to mix and blend well on high for about 5 minutes. Pour mixture into a 9x9 deep baking dish. Place in the oven while you prepare the topping. Approx. 10 minutes.

Crisp Topping Ingredients:


¾ c. Baking Coconut
¾ c. Chopped Pecans (or Almonds)
½ c. Packed Brown Sugar
¾ c. Quaker Oats (uncooked)
½ Stick of Melted Butter
Combine all ingredients except butter (add that last). Mixture should be moist. Pull the Sweet Potato Pie out of the oven and carefully sprinkle mixture loosely and evenly across the top of the pie. It will be about ¾ in. thick, but great for deep dish. Place back in the 350 degree oven for 40 minutes. Place on a cooling rack to cool slightly. This sweet potato pie recipe serves about 9 and might even be good ala mode while still warm.

Sweet Potato Pie Recipe with Bourbon Cream Sauce
2 cup Sweet potatoes, drained
4 tbs Margarine, melted
3 Eggs
1 cup Sugar
1 tsp Cinnamon
1/4 tsp Grated nutmeg
3/4 cup Milk
1 tsp Vanilla
1 9" pie shell, baked
1/4 cup Chopped pecans
Use a food processor or fork to mash sweet potatoes together with melted margarine. Blend in eggs, sugar, cinnamon and nutmeg. Add milk and vanilla. Pour mixture into baked pie shell. Microwave on 70% (medium high) 7 minutes.

Sprinkle pecans over surface of pie. Rotating midway through cooking, microwave on 70 % (medium high) 6 to 8 minutes or until center no longer jiggles. Top with Bourbon Cream Sauce. (recipe follows)

Bourbon Cream Sauce Recipe
3/4 cup Half and half cream
1/2 cup Milk
4 oz Pkg. instant French vanilla or vanilla pudding mix
2 tbs Bourbon or rum
In a mixing bowl, whip together cream, milk, pudding mix and bourbon. Refrigerate until slightly thickened. Serve with sweet potatoe pie. Makes 1 1/2 cups.

1 uncooked pecan pie shell (plain pie crust with ground pecans folded in)
2 Cups mashed sweet potatos
1 Cup Sugar
2 tablespoons Steen's 100 percent Pure Cane Syrup (I get what ever I can find at my grocery)
1 Tablespoon ground cinnamon
1 Tablespoon vanilla
6 eggs
1 Cup Heavy Cream
2 Tablespoons flour
Preheat the oven to 375 degrees F. In a mixing bowl, whisk the mashed sweet potatoes, sugar, cane syrup, cinnamon and vanilla together. Whisk in the eggs, one at a time. Whisk in the cream and flour. Pour the filling into the shell. Bake for about 45 minutes or until the pie is set.

Sweet Potato Pie Recipe
3 lbs. Yams
1 1/2 cups sugar
1 can evaporated milk
2 eggs
1 1/2 tsp nutmeg
1 tsp vanilla
1 stick of butter
Dash of cinnamon
Pre-heat your oven to 400°F.
Boil the yams with the skin on until until they easily break apart when stabbeb witha fork. Cool yams slightly. Remove the skin. Beat yams with mixer at medium speed, stopping frequently to remove strings from the beaters.
Once the strings are removed, add butter and continue to mix. Add remaining ingredients. Add nutmeg and sugar to your tastes.
Continue mixing your batter until it has a nice smooth consistency. The batter should not be thin or runny, and it should not be too thick either. If too thick, try adding a little more evaporated milk (by the tablespoon) until the batter is smooth. Pour your batter into an unbaked 9 or 10 inch pie shell, sprinkle a dash of cinnamon on the top and bake for 50 minutes to 1 hour.

(Tip: Brush the edges of your pie shell with ice water to prevent it from burning before the pie is actually done). Brown specs on the top of the pie are an indication that your pie is done. You can also insert a knife in the middle of the pie, and if it comes out clean it's done! Let cool for at least 1 hour before cutting and serving.

1 1/4 cups sugar

1/4 teaspoon ground ginger
1 cup milk
9-inch unbaked pie crust
3 egg whites

Preheat the oven to 350 degrees F.
For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.

For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10 to 12 minutes, or until delicately browned. Cool and serve.

I do believe every African-American mother knows how to make sweet potato pie, and if she has a son, he does too. Here is one I learned from mine.

Makes one 9-inch pie

* 2 medium sweet potatoes, peeled and diced
* 1 1/2 to 2 cups water
* 1 stick (4 ounces) butter
* 3/4 to 1 cup sugar
* 2 large eggs, beaten
* 1/4 cup buttermilk
* 1/2 teaspoon vanilla extract
* 1 unbaked pie crust

Preheat the oven to 325ºF. Place the potatoes in a saucepan covered with the water. bring to a boil and cook 15 to 20 minutes, or until the potatoes are tender and soft. Drain and discard the water. While the potatoes are still hot, mash them with the butter and sugar. Let this mixture cool slightly, then add the beaten eggs along with the buttermilk and vanilla and combine well. Pour into the pie crust and bake for about 1 hour.

I have this recipe from a diner cookbook my grandma gve me. I make it every year for Thanksgiving, Christmas and work Christmas parties. I buy the pre-made crust, and this recipe is enough for 2 of those.
Southern Sweet Potato Spice Pie
Crust(as I said, I buy premade and precooked ones already in the disposable pans)
2 cups mashed cooked sweet potatoes(about 1 1/4 lbs sweet potatoes)
1 cup granulated sugar
3/4 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp freshly grated nutmeg
1/8 tsp ground allspice
1/2 tsp salt
2 large whole eggs
1 lg egg yolk
3/4 cup whole milk
3/4 cup heavy cream
1 tsp fresh lemon juice
3 tablespoons unsalted butter, melted and cooled
1 tsp vanilla extract

Preheat oven to 450. To make sweet potato filling, in an electric mixer on med-low speed, beat together the mashed sweet potatoes, sugaer, spices and salt until well combined. Add the whole egges and the egg yolk, one at a time, beating well after each addition. Scrape down the sides of the bowl. Reduce speed to low and add the milk, cream, lemon juice, melted butter, and vanilla. Beat until well combined.
Pour the filling into the pie shell. Bake the pie for 10 minutes; reduce oven temp to 325 and bake 50 minutes longer, or until set and a knife inserted near the edge of the pie comes out clean. Cool pie on a wire rack; serve slightly warm

1 1/2 cups chopped pecans
2 cups heavy whipping cream
3 tablespoons confectioners' sugar
1/4 cup hazelnut liqueur
1/4 cup pecan halves

Preheat oven to 375 degrees F (190 degrees C).
Prepare dough for one 9 inch pie. Refrigerate until ready to bake.
