One of our local farmers grows the best sweet corn ever. I would like to freeze some of it on the cob, so I can pull it out in the winter (when I'm reaaaaaally missing it the most!). How do I prepare corn on the cob for freezing? Should I just wash it and leave it in the shucks?

Any help will be much appreciated.

husk the corn then blanch in boiling water for about 7 minutes
aftet that put directly in a big bowl of ice water to cool down and stop the cooking process - keep in the ice water for about 7 minutes
then freeze
it's best if you use a foodsaver sealer system

Well, I'd cut it off the cob. Otherwise it has a tendancy to shrivel up and the texture gets scary. But I would either cut it off the cob and freeze like that or I'd boil the shucks and then try to freeze them. I always miss fresh sweet corn in the winter too!

I've never left it on the cob, and if you're not worried about "corn on the cob" I have the absolute best recipe from my grandpa.

Frozen Sweet Corn

4 qt. (16c)corn, raw, cut off the cob
1/4 c. sugar
4 tsp. salt
3 C. water
1 stick butter

Combine corn, sugar, salt and water and boil 10 minutes. Stir constantly so as not to scorch it. Remove from stove, add butter. Cool. Freeze in Ziploc freezer bags. Approx. 2 c. to each 1 qt. bag.

Bring a kettle to boil and just a dip in boiling water(parboiling) than another dip in ice water ,wrap in saran wrap then put in a freezer bag.
Many people cut the corn off the Cob to save space in the freezer.

I generally wrap the corn--minus the shuck--in saran wrap, tightly, getting out all the air I can. Then simply place three or so in a gallon freezer bag. To cook--pop in microwave till soft. I have never had trouble with bad texture or flavor doing it this way. Good luck.

Remove the husks and silk. Put it in boiling water for a few minutes (it's called blanching and will remove dangerous enzymes), remove corn and put in very cold water to stop the cooking process. Cool, put in freezer bags.

You can wrap the whole ears,husk and all,and freeze it like that too.

You can't freeze it. It gets all mushy and gross. You have to cut it off the cob and then freeze it. It still tastes the same.
