Tablet is an original Scottish confectionery. There are a number of variations on the recipe and the method. Some miss out stage 6 below, giving the tablet a smooth finish instead of the rough (and more authentic) texture and appearance shown here.
Ingredients:
(Serves two)
» 500g/18oz/2 cups granulated sugar.
» 60g/2oz/one quarter cup butter.
» 3½ tablespoons condensed milk.
» 170ml/6 floz/three quarters cup water.
Method:
1. Grease a tin.
2. Place all the ingredients in a large saucepan and heat until the butter has melted and sugar has dissolved.
3. Bring the mixture to the boil. It is important to stir continuously at this point so the mixture doesn't stick to the bottom of the pan.
4. Bring the mixture down to simmer for approximately 10 minutes. The mixture should be thick and the colour should have turned from white to caramel.
5. Take the pan from the hob and place it on a heat resistant surface for about 5 minutes.
6. After the 5 minutes beat the mixture really hard. At this point it will start to set.
7. Before the mixture sets, use a wooden spoon to transfer it into the prepared tin. You will find it sets almost straight away.
8. Before it has completely set, cut the tablet into bitesize pieces and leave it to cool and set hard for 5 minutes.
9. Take the pieces from the tin and store them in an airtight container.

This is my mum and granny's recipe for tablet. Unfortunately mine never tastes as good as theirs. I love creamy tablet that just melts in the mouth - not that hard sugary stuff.
Good luck.
410 g evaporated milk
1 kg bag white caster sugar
250 g pack unsalted butter.
Use the butter wrapper to grease a 30 x 20 x 5.7 cm tin. Fill a glass three-quarters full with cold water.
In a large deep pan, gently heat all the ingredients until melted together. Bring to the boil slowly, then reduce the heat to medium and bring to a rolling boil. The mixture shouldn't stick, but do stir it frequently. Cook for about 15 minutes - towards the end you'll probably need to stir it more often.
To test if it's ready, drop some of the mixture into the glass of cold water. It should hold together and fall in a ribbon-like thread. The water should be just discoloured, but not too milky-looking.
Take the pan off the heat and hold it at a 45 degree angle, tipping it away from you. Now stir the mixture non-stop for 10 - 15 minutes, working from the sides and scraping the grainy bits into the centre. Once it starts to thicken and looks like peanut butter, it's ready.
Pour into the buttered tin and leave to cool slightly, then mark the top into 30 pieces (this will make it easier to cut later). Leave to cool before cutting and eating. Tablet should be softish, not brick hard, and splinter slightly when you cut it.

Well the recipe l know uses sugar, 1 small tin evaporated milk and a spoonful of syrup, boil them gently together for half an hour, don't let the sugar burn, then remove from the heat and stir for 10 mins until it starts to thicken, then pour into a tray to set, l haven't made it for a while, hope this helps.
