i dont want to use condenced milkbecause i want low calory cake

Eggless Raisin cake

Ingredients:
3 Cups Flour/Maida
2 Cups Black Raisins
1 Cup Pistachios
2 Cups of Water
1½ Cups of Sugar
2/3 Cup of Butter
1 Cup Yogurt/Curd
1/5 tsp Baking Soda
1tsp Salt
2tsp all Spice powder
1tsp Vanilla Essence

Method:
Seed the Raisins and chop very fine.

Heat the water and boil the Raisins in it until all the water is absorbed. Add the Butter to the Raisins and stir for 2 minutes. Remove from fire. Sift Flour with Soda, Salt and Spices.

Pour the Raisin mixture into a bowl. Now add Flour and Sugar alternatively with Yogurt. Mix well after each addition.

Lightly dust Pistachios with Flour. Add Pistachios and Vanilla Essence to the mixture and mix well. Transfer to a greased baking tin and bake for 1½ hour at 350 degree F.

2cupRaisins
1tspCinnamon
3cupFlour
1tspBaking powder
1/2tspBaking soda
1/2tspNutmeg
1/2tspCloves, ground


* Into a saucepan, measure sugar, water, shortening and raisins. Boil for 4 minutes. Cool. Sift together and add remaining ingredients. Bake at 350F for 40 minutes.

This is not exactly low calorie,but eggless cakes need fat because fat binds the flour and gives the cake a good structure.That is also why eggs are used in cakes-yolk provides fat and the albumen provides the protein.

Go to you local library and look up cook book for low cholesterol/low calorie cooking.

Try a few of them one after the other. Once you find the book that you like you may want to own the book.

Just curious:
If you do not want egg or you do not want Cholesterol? Cholesterol is removed from the egg by removing the yoke, it can be frozen and used later, given away to some to use or discarded.

I know it is not "lo-cal" but this recipe contains no egg or milk.

3C flour
2C sugar
1/2C Cocoa
2tsp baking soda
1tsp salt
3/4 cup of veg oil
2tsp vinegar
1tsp vanilla
2C cold water

Mix together, pour into greased pan (9x13) bake @ 350 for 40-45 minutes

this cake is moist and chocolaty, old recipie from grandma....hope you like it
