The easiest one to learn is the one you already know. The difficulties of other language depend on how far removed they are from your first language, and your capacity for learning new languages.

If English is your first language, than other Germanic (German, Dutch, Norwegian, Swedish, etc) or Romance (French, Italian, Spanish, Portuguese, Romanian, etc) languages tend to be easiest to learn. They are also the easiest to find teachers or classes for.
East Asian languages, especially those that use tones (Chinese dialects, Vietnamese are examples), and Middle Eastern languages (Arabic, Farsi are the biggest examples) tend to be the most difficult of the major world languages for English-natives to learn.

The easiest language is the one that you use in day to day life, if you are single it might be an idea to live in another country so you can pick it up better or be around people who speak that
language daily. If you dont use it you lose it. I have tried with French.

Esperanto is designed as the easiest language to learn. If you are looking for a "proper" language, then Italian is among the least difficult.

The hardest would most likely be Chinese. I studied Chinese for a little while, and found it to be incredibly difficult to grasp.
