CALICO BAKED BEANS

1 lg. can green lima beans
1 lg. can red kidney beans
1 lg. can baked beans
6 slices bacon, fried and cut up (may substitute 1/2 lb. pork sausage or ground beef)
1 1/2 c. chopped onion
1/2 c. vinegar
3/4 c. brown sugar
2 tsp. salt
1 tsp. dry mustard
1 clove minced garlic (optional)
1/2 c. catsup

Combine all beans in large casserole. Fry 6 slices bacon, drain and cut up. Add onion and fry briefly. Add remaining ingredients. Mix well and add to beans. Bake at 350 degrees, uncovered, for 1 1/2 hours.

My calico beans recipe...

Calico Beans

8 oz bacon (10 to 12 slices)
1 pound lean ground beef
1/4 cup brown sugar
1 tbsp mustard
1 can baked beans
1 can lima or butter beans, drained
1 can kidney beans, drained
1/2 cup ketchup
1 tsp salt
1 tbsp vinegar

Cook bacon, cool, and crumble. Brown ground beef. In an oven-safe dish, combine drained and rinsed ground beef (to get rid of the grease layer that you probably don't want) with *all* the rest of the ingredients. Bake at 350F for 30 to 45 minutes.

Calico Beans

2 large onions, peeled and chopped
- 1 pound Chorizo sausage
- 32 ounces canned lima beans (drained)
- 32 ounces canned garbanzo beans (drained)
- 32 ounces canned butter beans (drained)
- 56 ounces canned baked beans (undrained)
- 14 ounces catsup
- 1 cup brown sugar
- 2 1/2 tablespoons liquid smoke
- 1/3 cup yellow mustard
Sauté onions and sausage.
Combine all ingredients and pour into a large cassserole.
Cover and bake at 350° for 1 1/2 to 2 hours. May substitute other beans of your choice.

1 (16 ounce) can pork and beans or vegetarian baked beans
1 (16 ounce) can kidney beans
1 (16 ounce) can lima beans or butter beans

Cook bacon in skillet until crisp, then crumble and set aside.
Cook beef in skillet until no pink remains. Add onion, sauté just until tender.
Combine beef, onion, ketchup, salt, brown sugar, mustard and vinegar in a 3 qt baking dish or crock pot. Partially drain all the beans (I don’t drain the baked beans) and add to the baking dish or crock pot, stirring gently to mix. Sprinkle with bacon.
Bake at 350 F for 40 minutes or cook in crock pot until heated through.
For vegetarian version just sauté onion and add to bean mixture. If using dry tofu crumbles it isn’t necessary to rehydrate them first, I just stir them into the mixture. It may require addition of water to the mixture if it gets too thick, I just play it by ear. When using frozen crumbles or gimme lean ground “beef” I heat it up in the pan with the onion before adding to the bean mixture.

1/2 cup bacon, chopped

1 (15 ounce) can kidney beans, drained

1/2 cup ketchup
1 cup packed brown sugar
1 cup chopped onion
3 tablespoons white wine vinegar
1 teaspoon mustard powder
1/2 cup chopped celery

DIRECTIONS:
Preheat oven to 350 degrees F (175 C).
Place bacon and ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
In a four quart casserole dish, mix together the bacon, ground beef, pork and beans, kidney beans, butter beans, lima beans, ketchup, onion, vinegar, dry mustard and celery.
Cover and bake for 1 hour.

1 28 oz can Bush's Baked beans
1 can butter beans,drained
1 can kidney beans,drained
1 lg. onion, chopped
1/2 lb. ground beef; fried and drained
1/2 c. ketchup
1/2 c. brown sugar
1/2 sugar
1 tsp mustard
1 tsp vinegar

Mix all of your ingredients together and bake in a casserole for 1 hour at 350 degrees.
