Corn Chowder Relish
12 ears of corn 1 Tablespoon celery seed
1 quart chopped cabbage 1/4 teaspoon turmeric
12 onions 2 cups sugar
3 green peppers 1 quart vinegar
3 red peppers salt to taste
1 tablespoon ground mustard
Precook corn 3 to 5 minutes, cool and cut from cob. Chop other veggies fine, mix together, and add other ingredients. cook for 25 minutes.
Pour into sterilized jars and seal.
"Red pepper Relish"
2 dozen sweet peppers (RED)
7 med onions
2 tablespoons mustard seed
2 tablespoons salt
3 cups vinegar
3 cups sugar
Grind peppers and onions, saving the juice. Combine with juice and other ingredients. Boil 30 minutes, Pack into sterilized jars and seal.
"Apple Chutney"
12 sour apples 2 minced green peppers
1 minced red pepper 1 cup seeded raisins, chopped
1 pint cider vinegar 1 Tablespoon ground ginger
1/2 cup current jelly 1/2 teaspoon cayenne
2 cups sugar 1 Tablespoon salt
Juice 4 Lemons
Pare and core and chop apples. Put the ingredients together in order given and simmer until Thick.
Pour into sterilized jars and seal.

Corn Relish
1/4 cup chopped prepared chutney, drained
1/2 cup sweet pickle relish
1/4 tsp mustard seed
1 (12 oz) can whole kernel corn, drained
1/4 tsp salt
1 (4 oz) jar pimentos, chopped
Combine all ingredients; mix well. Cover; refrigerate.

take some sweetcorn, a chopped up pepper, one chilli without seeds, a red onion, a couple of tomatoes, and a clove of garlic.
Finely (depending on how smooth or chunky you want the relish)chop the onion, pepper, chilli, and tomatoes, then throw them all into a saucepan.
Next crush the garlic in there with them, and pour in your sweetcorn.
Now add a little bit of salt and pepper, and about 4 or 5 tablespoons of sugar.
You might want to add a dash of balsamic vinegar too.
Now put it all over the heat and kep stirring it until it reduces down and takes on the right texture.
Allow it to cool, then enjoy it with your sausages, burgers, sandwiches etc etc.

sweet corn relish
INGREDIENTS:

5 cups chopped green bell peppers
2 cups chopped onion
2 cups coarsely chopped unpeeled cucumber
4 cups chopped red ripe tomatoes
4 cups vinegar
2 cups sugar
1/4 cup salt
1 tablespoon turmeric
1 tablespoon mustard seed
PREPARATION:
Combine prepared vegetables in a large kettle. Add vinegar, sugar, salt, turmeric, and mustard seed.
Heat to boiling, simmer 25 minutes or until the vegetables are tender.
Seal in hot, sterilized canning jars.

SWEET CORN CHOWDER
1/2 lb. bacon, chopped
2 lg. onions, sm. diced
6 ears sweet corn, shucked & kernels removed
4 lg. potatoes, peeled & cubed
2 qt. whole milk
1 each lg. red pepper, med. diced
4 tbsp. parsley
Salt & fresh cracked black pepper to taste
In a large, heavy pot, saute bacon until crisp. Remove from pot leaving enough fat to saute onions. Saute onions in bacon fat but be careful not to brown. Add potatoes and milk; cook slowly until potatoes are soft. When soft, puree in a blender. Add the smooth puree back to the pot. Repeat the blender step two times. Saute the red peppers and add to soup with corn, parsley, salt and pepper. Heat slowly until soup is hot and serve garnished with bacon from before
SWEET CORN TAMALE "PIE"
1 c. yellow cornmeal
1/3 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
1 (16 oz.) container nonfat cottage cheese
1 (16 oz.) pkg. petite corn kernels, thawed (or shoepeg corn, drained)
3 green onions, finely chopped
4 egg whites
2 (14 1/2 oz.) cans Mexican style stewed tomatoes
Oven at 350 degrees. 8 x 8 inch square glass baking dish sprayed with cooking spray.
Whisk first 4 ingredients to blend in bowl. Mix in cottage cheese, then corn and green onions. Beat egg whites until stiff, but not dry, in another bowl. Fold egg whites into cornmeal mixture in 2 additions.
Transfer batter to prepared dish. Bake until top is golden and feels firm in center, about 50 minutes. Let stand 10 minutes.
Boil stewed tomatoes in heavy saucepan until reduced to sauce consistency, about 10 minutes. Cut "pie" into squares, leave in baking dish. Spoon tomato sauce over and serve.

blend all three up with a little bit of garlic and season with salt & pepper... goes good with nachos or very thin naan bread
