Lamb Potjie
2 Lamb Shanks cut 2 inches thick pieces 2 slices smoked Bacon cut in 1 inch pieces 10 pieces of NZ or Oz lamb neck salt, pepper braai / BBQ seasoning 1 can tomato pieces 6 baby potatoes, chopped in half 2 large onions, chopped coarsely 6 large carrots, chopped coarsely 1 tin of oyster mushrooms 2 green/ red peppers chopped cubes 1 cup beef stock 1 cup red wine cup sherry cup Mrs Balls chutney 4 tablespoons olive oil 2 tablespoons crushed garlic 1. Heat the oil in a medium-size Potjie, then fry the onions, bacon and lamb chops for about hour, stirring from time to time add herbs and spices and garlic. Cover with lid and leave to cook for about 45 minutes. 2. Open pot, stir, then add Veggies. Add all liquids 3. Cover with lid and cook for about another 3 hours slowly over medium coals or low setting on gas; check if there's enough juice after a while, and add more if necessary. 4. Stir through add tomatoes paste to thicken leave for 10min ; the meat should fall off the bones.

Oxtail With Red Wine Potjie
3 lbs oxtails, cut into sections
2 tablespoons all-purpose flour
2 tablespoons cooking oil
1 large onion, chopped
1 garlic clove, crushed
2 bay leaves
2 teaspoons salt
fresh ground black pepper
1/2 teaspoon dried rosemary or 2 teaspoons fresh rosemary
1 cup dry red wine
1 cup meat stock
2 leeks, sliced
2 carrots, quartered
2 stalks celery, cut into chunks
1. Coat oxtail with flour and brown in heated oil.
2. Add bay leaves, salt pepper and rosemary to meat and pur heated wine and stock itno pot. Stir once, then cover with lid and simmer slowly for 2.5-3 hours or until meat is tender. Only oepn the lid to replenish with heated wine or meat stock if necessary.
3. Arrange leeks, carrots and celery on top of meat and simmer for furhter 15-30min.

Yes, the South African way of basically making stew on a fire... What do you want to know about it? I've got a killer recipe for a Chicken potjie....
Boil chicken pieces of one chicken till half done.. take it out and fry two onions till golden brown, add packet of mushrooms, tub of cream, a tin of asparagus, then the chicken and some potatoes (peeled and diced) Add some Aromat, pepper and salt to taste.... This is soooo nice... you can add greenpepper too if you like...

Yes, of cource!!! my favourite is ox-tail, mushrooms, dried fruite... some potatoes and carrots. mmm mmm mmm. lekker... the South African way...

yes its a 3 legged cast iron pot used for cooking on an open fire it it resembles the pot you would see tribesmen cooking missionaries in in bad cartoons
