I have a freezer full of shrimps a husband with the flu and refusing anything but shrimp. So i want something tasty and fast!

GINGERED SHRIMP & NOODLE SOUP
(the ginger will work wonders on the cold too)


1 Stephen Ceideburg Envelope noodle soup mix -with real chicken broth
4 1/2 c Water
2 tb Rice wine vinegar
1/2 ts ground ginger, or (1 1/2 ts Chopped fresh ginger
1 d Dried red pepper flakes
1 lb Medium uncooked shrimp, -cleaned
8 oz Frozen sugar snap peas,-partially thawed, or
1/2 lb Fresh sugar snap peas
2 oz Radishes, sliced (about 1/3 -cup)


In large saucepan, combine noodle soup mix, water,
vinegar, ginger and red pepper flakes. Cover and bring
to a boil, then simmer uncovered, stirring
occasionally, 1 minute. Stir in shrimp, sugar snap
peas and radishes. Simmer, stirring occasionally, 4
minutes or until shrimp are pink and vegetables are
tender-crisp.

Microwave directions: In 3-quart microwave-safe
casserole, combine water, vinegar, ginger and dried
red pepper flakes. Microwave covered on high for 10
minutes or until boiling. Stir in noodle soup mix,
shrimp, sugar snap peas and radishes. Microwave
covered 4 minutes or until shrimp turn pink. Stir,
then let stand covered 2 minutes.

Here is an easy one. Boil the pasta until it is 99.5% done to how you like it. Cook/heat the shrimp in a small frying pan in some butter. When that it done add some veggies. Thinly cut carrots and small pieces of broccoli and other stuff works nicely. Even bell peppers! Lastly add the pasta and toss it all together! Enjoy!!!

Easy Shrimp Dinner Ready In:35 Minutes

2 1/2 cups water
3 cubes chicken bouillon
3 pounds shrimp, peeled and deveined
1/3 cup chopped green onion
1/4 cup soy sauce
salt to taste
1/4 cup cornstarch
1/4 cup cold water
12 ounces trimmed snow peas
4 small ripe tomatoes, diced

In a large saucepan, heat 2 1/2 cups water to a boil over medium-high heat. Dissolve bouillon in boiling water. Add shrimp, green onion, soy sauce and salt. Boil for 3 minutes.
Dissolve cornstarch in cold water; stir into shrimp mixture. Cook until sauce is thick, then add tomatoes and snow peas. Serve hot.

Chilled Shrimp Soup

2/3 pound cooked shrimp (frozen is fine)
2/3 of a seedless cucumber (English), peeled and roughly chopped
1/4 cup sweet onion roughly chopped (Vidalia or similar)
or
3 tablespoons scallions
2 tablespoons Dijon mustard
2 teaspoons sugar or other sweetener
3 teaspoons dry dill
or
2 tablespoons chopped fresh
3 cups buttermilk
(pickled beets)


Directions:

Put all ingredients except about 2 cup of the buttermilk in blender or food processor and puree. (The shrimp can be pureed while still frozen.) Add the remaining buttermilk and taste for seasoning.

If all you have is raw shrimp, I suggest cooking them in a little vermouth and adding the vermouth to the soup.

Just saute the shrimp in butter or margarine to which you have added some chopped garlic. saute until the shrimp turns pink and pour over cooked pasta of your choice. It is very simple. You can even add a few chopped veggies or grated carrots if you wish to.
