Be seen by patrons but don't pester them.......They will let you know if they need anything. keep close check on beverage make sure the patron does not run out

Wait staff should be able to keep theri own tips but should 'pay out' a certain percentage to kitchen, bus staff, hostesses. I think 10% of their tips to both kitchen and bus staff and a flat $10 or whatever to hostess everynight. They could also pay bus staff and hostesses $1/table. Just pay out at the end of the night according to how many tables you had. (Of course depending on the amount of tips.) They help you make the money and should get a cut.

make sure that the glasses stay at least half full, but dont hoover over the patrons. make sure that their orders are right.
