Soft chapatis can be made by adding a little milk to the dough. The kneaded dough can be stored in the refrigerator by keeping it it a closed vessel or keeping it in a bowl, covered by a steel plate. It will last for about 2-3 days.

To make soft chapaties you should use the whey resulting from making paneer.
You can store the kneaded flour in wrap in the fridge for a couple of days, but it won't freeze well.

I can't remember the exact chapatti recipes, but they will be in a lot of vegetarian or Indian cookbooks. I would store kneaded wheat dough in the fridge for not more than two days. If you freeze it, you could store it for about 3 weeks, tightly wrapped.
