Why are you stewing your fruit for pie? It cooks in the oven with the crust. If you don't like to use sugar, honey or splenda will work just fine.
You just put the prepared fresh fruit in the bottom crust. mix the fruit, some flour, the sweetner of choice and put in bottome crust, dot it with butter, apply top crust. Put strips of foil around the edges of the top crust for most of the baking time, then remove the last 15 minutes so it can brown.

I've never heard of this particular pie, but if it was me, I would cut the apples up, add a small amount of water, and Splenda (sugar substitute made from sugar, safe for diabetics, or some honey), and on a medium heat let them stew covered for about 1/2 hour. Then I would add the strawberries and blueberries so they wouldn't get overcooked, stir it all together, and put it into the pie crust, and bake it for about 45 min. @ 350.

What a bummer cuz apples and cinnamon really do go well together. But you can just leave it out even though it will probably be lacking in that "extra" flavor. I have added a drop of maple flavoring to apple baked goods, you could also try a dash of cloves, or nutmeg or anyone of those that you normally think of together. Also adding some cherry pie filling or if you are making your own making your own add some frozen cherrie or blueberries for a little extra flavor.

i don't know about blue berries or strawberries. for apples, i toss peeled, cored, sliced apples with a sprinkle of salt, cinnamon, and sugar to taste. place apples in an UNbaked pie crust. dot with butter if like. cover with top crust ( poke holes in bottom crust first.) make vent holes in top crust and bake at 350 oven til crust are golden brown. simple yes but oh so tastey.mmmmm. without sugar? let see... try simmering apples and cinnamon in apple juice then add a little thickening agent ( various types of flour or corn/ potatoe starch). or maybe with "SPLENDA" i've heard that you can use it for baking too. but nobody said how it taste. it might be like Tofurkey. everyone was quiet about that taste for awhile. BAD BAD PEOPLE.

Sugar & water is the ONLY way to stew fruits.
Going WITHOUT sugar, the fruit won't taste very good!
YOU could probably USE 100% JUICE to stew them in!

First peel apples and mash them,
then mash strawberries and blueberries
then put into pie dough.
Don't add sugar.
Bake at 230 deg f for 30 minutes
