Brownies or cookies are very easy to make and won't have any mess involved. A yummy thing to fix is to take chocolate chip cookie dough and instead of making into round cookies, spread the dough inside a 9x13" baking pan and stick in the oven for the same time. Cut those into squares when they come out of the oven. Make a second batch if you need more.
Fruit will be very messy.

When its warm like this ice cream bars or popcicles are always a favorite and usually the school kitchen will let you use their freezer to store if you ask ahead of time to be certain they don't have 40 turkeys in there for the next day.
Also chips and salsa are fun and paper bowls and towels make that an easy different "dessert". Or lots and lots of popcorn and two litre bottles of pop.
Another my class always likes are root beer floats. Large plastic cups, 1/2 gallon of ice cream for every 10 people and two liter bottles of pop. Cut the ice cream into "squares" by opening carton and end flaps also, cut in half and across five times. Each square fits nicely into a cup and with the pop and a plastic spoon and everyone is cool and it is delicious. Have Fun!! Sounds like a great idea each Friday.

One thing that is a BLAST... is to get some of those plastic banana splt boats (your ice cream shop w/probably give you some)
Then bring in your cooler filled with Neopalitan (vanilla, strawberry, & chocolate icecream, at least 2 gallons of it) ... various toppings (fudge sauce, sprinkles, cherries, etc.....) some spoons, bananas. and napkins.
I don't care how old the crowd is.... from age 2 to 102, people LOVE "ice cream socials"!!

What about Fresh Fruit? Watermelon, Cantaloupe, Grapes all mixed together.
If you want, you can even add Blueberries, Strawberries, Pineapple & Bananas!
ADD the Bananas in class. Keep them in the peels & peel them as needed!

LEMON SQUARES DELUXE
CRUST:
2 c. flour
1/2 c. confectioners sugar
1 c. butter (2 sticks)
Mix until it clings together (like pie crust). Press down on ungreased 9"x13" Pyrex dish. Bake at 350 degrees for 25 to 30 minutes or until golden. Remove from oven.
Combine:
4 eggs, beaten
2 c. sugar
1/3 c. fresh lemon juice
1/4 c. flour
1/2 tsp. baking powder
Mix and pour over baked crust. Return to 350 degree oven and bake 25 to 30 minutes or until golden. Cool and sprinkle with confectioners' sugar. Cut into squares.
TRIPLE-LAYER CARROT CAKE WITH CREAM CHEESE FROSTING
Cake
2 cups sugar
1 1/2 cups vegetable oil
4 large eggs
2 cups all purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
3 cups finely grated peeled carrots (about 1 pound)
1/2 cup chopped pecans (about 1/2 ounce)
1/2 cup raisins
Frosting
4 cups powdered sugar
2 8-ounce packages cream cheese, room temperature
1/2 cup (1 stick) unsalted butter, room temperature
4 teaspoons vanilla extract
For cake:
Preheat oven to 325°F. Lightly grease three 9-inch-diameter cake pans with 1 1/2-inch-high sides. Line bottom of pans with waxed paper. Lightly grease waxed paper. Using electric mixer, beat sugar and vegetable oil in bowl until combined. Add eggs 1 at a time, beating well after each addition. Sift flour, baking powder, baking soda, salt, cinnamon and nutmeg into sugar and oil mixture. Stir in carrots, chopped pecans and raisins.
Pour batter into prepared pans, dividing equally. Bake until toothpick inserted into center comes out clean and cakes begin to pull away from sides of pans, about 45 minutes. Cool in pans on racks 15 minutes. Turn out cakes onto racks and cool completely. (Can be made 1 day ahead. Wrap tightly in plastic and store at room temperature.)
For frosting:
Using electric mixer, beat all ingredients in medium bowl until smooth and creamy.
Place 1 cake layer on platter. Spread with 3/4 cup frosting. Top with another cake layer. Spread with 3/4 cup frosting. Top with remaining cake layer. Using icing spatula, spread remaining frosting in decorative swirls over sides and top of cake. (Can be prepared 2 days ahead. Cover with cake dome and refrigerate.) Serve cake cold or at room temperature.
Serves 10.
