Most dogs pick up on this fairly quickly (a couple of days). Let me know if you try this and it works for you!
PS- To stop the jumping up behavior lift one knee up as he's coming toward you and knee him in the chest (really he should just sort of bounce off your knee) and at the same time put your hand out, palm down, and over his head, and say in a very, very firm voice "stay down" or "down".

Do the same thing here. When the dog jumps up grab his collar, smack his nose, say DOWN and then once he is off of you say Good boy, give him a pet and move on. Just like people dogs all learn at different rates but within a couple days hopefully your dog will begin to understand that this behavior is unexceptable.

There's a bottle of stuff they sell at pet stores called "Bitter Apple". It's quite litterally green apple juice (very bitter). Spray that on your hand and the next time your dog grabs your hand, it will stop...
But it thinks that it's playing a game. It will not bite your hand hard enough to hurt you. But one method I used was to scream "OW!" really loud whenever the dog grabbed my hand or arm. This seems to work well. The last thing the dog wants in the world is to hurt you.....

Hold his mouth shut, just around his mouth and gently squeeze it til he yelps, not too hard, and dont say nothing, that is what the mother's do when the puppies bite her, she grabs their mouths in her mouth and presses, I swear by this, I have a pug. It works, so there.

Put a muzzle on him everytime he does it. Leave it on for 10-15 min. or so. Then remove it. Every time he does it, put the muzzle back on. Keep repeating this until he gets the idea.
