Spanish Meatloaf
Serves 6
1-1/2 lb Ground Beef, lean
1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)
Instructions:
Preheat the oven to 350ºF
In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.
Place 1/2 of the mixture in a broiler pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.
Bake for 45 minutes; drain any residual fat if necessary.
Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

Beef flavored ramen noodles w/hamburger is good. Cook the ramen noodles as you normally would. Then after you add the seasoning and stir add the hamburger. If you like sour cream that also makes it good, just top it with that. Or if that's not your style buy a box of bisquick and make the cheesburger pie. It's really good. You can go to bisquick.com for the recipe if it's not on the back of the box.

INGREDIENTS:
1 1/2 pounds lean ground beef
1 onion, chopped
2 cloves garlic, minced
1 tablespoon chopped fresh basil
1 teaspoon dried oregano
2 tablespoons brown sugar
1 1/2 teaspoons salt
1 (29 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
12 dry lasagna noodles
2 eggs, beaten
1 pint part-skim ricotta cheese
1/2 cup grated Parmesan cheese
2 tablespoons dried parsley
1 teaspoon salt
1 pound mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese

DIRECTIONS:
In a skillet over medium heat, brown ground beef, onion and garlic; drain fat. Mix in basil, oregano, brown sugar, 1 1/2 teaspoons salt, diced tomatoes and tomato paste. Simmer for 30 to 45 minutes, stirring occasionally.
Preheat oven to 375 degrees F (190 degrees C). Bring a large pot of lightly salted water to a boil. Add lasagna noodles, and cook for 5 to 8 minutes, or until al dente; drain. Lay noodles flat on towels, and blot dry.
In a medium bowl, mix together eggs, ricotta, Parmesan cheese, parsley and 1 teaspoon salt.
Layer 1/3 of the lasagna noodles in the bottom of a 9x13 inch baking dish. Cover noodles with 1/2 ricotta mixture, 1/2 of the mozzarella cheese and 1/3 of the sauce. Repeat. Top with remaining noodles and sauce. Sprinkle additional Parmesan cheese over the top.
Bake in the preheated oven 30 minutes. Let stand 10 minutes before serving.
Rock on! (( serve with red wine)) And ya don't have to cook it the day before. That is just a suggestion.

Here's my favorite...Sprinkle ground beef with chili seasoning. Add 1 cup water. Cover and simmer 10 min. Add 1 can diced tomatos, 1 can (6 oz.) tomato paste, 1 pkg. frozen corn or 1 can of chili beans. Mix 1 pkg. (8 oz.) Jiffy corn muffin mix with 1 egg and 1/4 c. milk. Drop corn bread mixture by spoonfuls over bubbling meat mixture. Cover and simmer 10 min. Unicover and cook 5 min. longer.

Saute some onions & a little flour with the meat, add a beef bouillon cube (I use Knor) & some water and simmer for about 25 minutes, spoon over homemade cream potatoes. Delicious!!

Yes i dooooo, Beef and cheddar enchiladas!! Lightly fry some corn tortillas in cooking oil, draind and stack on a plate. Roll ground beef up in tortillas put in casserole pan. Pour a can of enchilada sauce on top and chesse(mix it up if you want) onions....whatever you like.....olives...and bake before eating to melt cheese and to heat it....Good.

Maybe you can make a casserole. Like stroganoff or something. I would think a casserole would be easy, just include a sauce you like (not a red sauce), some vegetables like peas and onions, some spices you like, and some pasta.
It sounds good to me, but I'm trying to teach myself how to cook. Hope I helped!
