You haven't mentioned which canon camera you use.
If it is a film camera or if it is full frame DSLR like EOS 1Ds Mark II or EOS 5D then you should buy a standard portrait lens : an 85 mm, a 28-135 IS, or 24-105 IS USM, 70-200 f2.8 L IS USM.

If you are using cameras with 1.6 factor like EOS 350D, 400D, 30D etc then buy a 50 mm 1.4 lens along with the other lenses listed earlier.

Well, it depends on the light. Will you be indoors, or out? Outdoors you can get away with a cheaper lens, indoors you need a larger maximum aperture unless you are using a flash. You probably don't want to go larger than a f2.8 aperture or you will not get the entire subject in focus. A 50mm is closest to the natural eye, 135mm is telephoto, so you might want something in between 50mm and 135mm.

A nice one would be either the 24-85 USM or 28-105 USM lens

Depends on how far away the subject is, the effect you want to create and various other factors.
