This is my mother's (& now my) recipe. The recipe is over 50 years old & still one of our family favorites. A summer holiday was / is not complete without it. Enjoy!
MOM’S POTATO SALAD
Note: the following amounts are approximates, Mom never measured for this recipe. I always “mix & taste” until I get it like we like it. Also, the measurements are obviously in amounts for a large get-together, but is easily reduced for smaller gatherings. It's even better after the first 24 hours of chilling in the fridge.
10 lb. potatoes, peeled, quartered
1 pint dill pickles, chopped
1 doz. eggs, boiled, peeled, chopped
1/2 to 1 large onion, diced
1 to 3 T. prepared mustard
1 pint to 1 qt. Miracle Whip (do not substitute another brand)
salt, to taste
Boil prepared potatoes until tender, then mash while hot. We seem to like the potato salad better when the potatoes are mashed by hand instead of with an electric mixer; has a better texture. Place in large container, add prepared hard-boiled eggs on top of potatoes. Cover & refrigerate until cool. When the potatoes & eggs are completely cooled, add the prepared dill pickles, onions, & salt (NO pepper). Add the small amount of prepared mustard (this is only for color, not for taste). Add Miracle Whip a little at a time.
Note: you must use Miracle Whip. Mix & taste until it suits your taste. Tip: This is a good excuse to eat more than your fair share. But remember, the taste will change as the flavors of all the ingredients mingle while chilling. After mixing ingredients to your desired taste, cover, & refrigerate. Flavor is best if refrigerated at least 24 hours before serving.

2 lbs red potatoes.
1/2 c. shallots
1/2 c. diced celery
2 tsp. dijon mustard
1/2 c. Miracle whip
1/2 c. sour cream
Cut the potatoes in quarters and boil, skin on, for 20 minutes. Drain, rinse, cool to room temperature. Dice into 1 inch cubes. Put celery and shallots in with potatoes in large bowl. In another bowl blend the sour cream, miracle whip, and mustard. Toss all ingredients together. Refrigerate over night (always best if it sits over night!) and serve.

I make my potato salad just like any other regular potato salad but I usually add some juice from a jar of pickles (preferably sweet pickles)

Boil Potatos 6or7, fry bacon cut up in small slices 1 lb, 1 small onion diced.... cut potatos up not to small. Add bacon & onion---- Heat bacon fat , Mix 1egg 1half cup vingar & not quite as much water , 1 Tb spoon of flour a spoon of sugar & tea spoon of salt . Mix well -- pour in to hot bacon greese slow & stir. Should get thick, turn down heat stir & taste test , more salt or sugar, may not need all of the suace-- Pour over potato, onions & bacon .. Serve hot !!!! German Potato Salad. is yummy..

before boiling the potatoes, cut them in squares, not so small, not so big, while the potatoes are ready chop celery, green olives, black olives, red pepper the one you buy in a can, then when the potatoes are ready, pour them in a bowl, pour the already chopped vegetables add mayonnase, a little bit of mustard, you can also add, two boil eggs and the chop them in little squeare, black pepper and salt, mix it all together, it's delicious!!

It's a holiday weekend .. who wants to cook .. Check the deli aisle at your local market. YUmmmmmmm Tater Salad that you don't have to make .. you can even nibble on it during the drive home.

here's one that i have request for at all our family gatherings and at weddings and church functions
*************************************************
6-8 -medium to large potato's
1 -medium onion chopped
1 -8 ounce of salad olives(green)
1/2-cup of sweet pickle relish
1/2-cup mayonnaise
3 tbsp-regular mustard
salt and pepper to taste
cook potatoes done ,drain off water ,mash with potato masher,add all ingredients to the potatoes. can add boiled eggs if want.

Cut into big chunks, boil, drain.
Toss w/ crispy fried bacon, crumbled. (Do *not* substitute bacon bits, etc.)
Gently mix in diced onion you cooked in the bacon grease, a tad of the grease, mayo & mustard to taste, salt & pepper.
Serve warm/room temp.
