This is the only steak my family will eat. They do not even like NY strip any more. We have our meat processor cut our venison steaks to about 1 inch thick, then I marinate and grill to medium rare. The Great and Outstanding Steak Marinade
u need:
3 tablespoons canola oil
1 tablespoon lemon juice
1 tablespoon worcestershire sauce
1 tablespoon soy sauce
1-2 teaspoon minced garlic
1/2 teaspoon ground pepper
1 (1 1/2 lb) package venison steak
Mix all marinade ingredients together in a small measuring cup.
Place venison steaks in a large zip lock bag.
Pour marinade over steaks and seal bag.
Place bag in a flat casserole dish so that the steaks are in a single layer.
Refrigerate and marinate at least 4 hours, turning every half hour to marinate each side.
Drain marinade and grill steaks to desired doneness.
I double or triple this recipe for each addition package of steak. Any wild game steak can be used in this recipe.

Try this special marinade.
1 can onion soup
1 can beef broth
1 can pineapple juice
1 tbsp Worcestershire sauce
juice of 1 lemon
1 large bottle soy sauce
1 tsp dry mustard
garlic salt to taste
Combine all ingredients in large saucepan; bring to a boil. Reduce heat; simmer for 5 minutes. Cool marinade to room temperature. Submerge steak in marinade; let stand for 4 to 6 hours in refrigerator. Remove steak from marinade and grill.

A little salt and pepper and a lot of worschester sauce. Marinate overnight. For rare steak cook on #4 or 5 for 3 min. on each side, medium 5 min and well 7 to 8 min. A good T bone has plenty of it's own flavor.

Outstanding Steak Marinade
1/2 cup Worcestershire sauce
1 cup Italian-style salad dressing
2 teaspoons garlic pepper seasoning
1 cup barbeque sauce
2 pounds beef sirloin tip steaks

DIRECTIONS:
In a medium bowl, mix the Worcestershire sauce, Italian-style salad dressing, garlic pepper seasoning, and barbeque sauce. Place the meat in the marinade, and turn to coat. Cover, and refrigerate for at least 1 hour.
Preheat grill for high heat.
Brush grill lightly with oil to prevent sticking. Place steaks on the grill, and discard marinade. Grill steaks 10 minutes on each side, or to desired doneness.

If you have a really good steak you don't need a marinade, but you can make a flavored butter with bluecheese mashed with some butter to make a paste, then put a dollop on top your grilled steak. Serve it with some sauteed fresh mushrooms.

SPICY STEAK MARINADE
2 tbsp. prepared yellow mustard
1/4 cup worcestershire sauce
1/4 cup soy sauce
1/2 tsp. minced garlic (1/4 tsp. garlic powder)
1 tbsp. minced onion (1 tsp. onion powder)
1/4 tsp. red pepper flakes
1/2 cup water to thin marinade
Combine all ingredients and mix well. Place steaks in ziploc baggie and pour marinade overtop. Allow to rest for at least two hours, preferably overnight for best flavor and tenderness.

You need a really good piece of meat. Don't buy the steak in the frozen section of the grocery store. Buy it from a busy butchershop. And if you cook your steak right, just Kosher salt and black pepper is all you really need.

try this and you will never change. it's fast and simple but gooood! Dale's steak seaoning, white pepper,garlic power and a splash of beer. marinate the steak in Dale's and beer for about 2 hrs. season with white pepper and garlic power.

1/4 cup sweet Hungarian paprika
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
1 tablespoon light brown sugar
1 teaspoon cayenne pepper
