Boiling ribs makes really good beef (or pork) stock, but is lousy for ribs. 'Ever notice how people who advocate boiling ribs usually end up slathering them with some kind of commercial BBQ sauce at the end? That's because all that boiling leeches all the fat and juice out of the meat and into the water, where it is subsequently poured down the drain. Really good ribs need to be cooked "LOW AND SLOW" like all the best rib barbecuers in the world do it. Most people "grill" their ribs, which is completely different from barbecuing them. Grilling is done too fast and too hot, like a "quickie". Barbecuing is like a long, slow love-making session with a beautiful partner. You decide which you prefer. Put your heat at one end of the charcoal pit and your meat at the other end. That's called indirect cooking. keep your heat low (never above 225*F.) and let it go for 2-1/2 to 3-1/2 hours MINIMUM. you can marinate before cooking, if you like, you can use a dry rub, you can use a mop sauce during cooking, or you can just leave it alone and let the long, slow heat do its job, which is to break down the connective tissue that holds the ribs (and the cow!) together while it is out there on the prairie munching grass and getting fat. When the meat is cooked, the ribs will twist in their sockets with very little effort and the meat will have pulled back from the end of the bone leaving a piece of bone exposed for you to test the twist-ability factor. Add BBQ sauce if you like, but I prefer mine sauce-less to let the flavor of the meat shine through.

If we're talking grilling meat on the barbeque, then beef ribs!

and even though this isn't part of the question, I LOVE a barbequed baked potato(this is what I eat with the beef ribs)! A potato that has been coated in salad oil, salt & pepper, wrapped in foil and baked on the barbeque-YUM!

I think it all depends on how you make them. Both have great flavor to them. But I personally like BBQ pork ribs. How about you which one do you like?

BBQ pork ribs are the best especially when they are dry rubbed.

Pork ribs taste better and less FATTENING than BEEF RIBS.. I noticed that its soo much fattening and the oil ... SO i rather eat pork ribs even its soo YUMMIE!
