Absinthe is not meant to be drunk neat.
You should add 6 to 8 parts ice cold water to the absinthe to dilute it to the correct level. Absinthe is very alcoholic, from 70-80% alcohol by volume, whereas normal spirits like vodka and whiskey are 40%.
When you add water to absinthe it turns from clear to an opaque milky pale green color. This effect is known as the louche and is caused by solids in absinthe coming out of solution.
I just have it with ice with cold water added. Some people prefer it a little sweeter and add some sugar.
The traditional French method was to place a sugar cube on a perforated spoon balanced over the glass of absinthe and drip ice cold water through the sugar into the absinthe. Putting ice cubes in the glass before adding water is as effective, and you can use 7-Up or other soft drink instead of water.
A recent fashion to set the sugar lump on fire is dramatic, but adds nothing to the drink but the taste of burned sugar.
Dilute and sip with pleasure on a hot day.

How do you drink absinthe?
There are two words to describe absinthe: strong and bitter. The alcohol content in absinthe ranges from 60%-90% so do not drink it straight. You will definitely regret it. The best way to drink absinthe is diluted with water with some added sugar. You can use either the traditional or the Czech method.
Traditional Method : Pour absinthe into a glass until it is about 1/5 full. Place a sugar cube on an absinthe spoon and rest the spoon over a glass. A fork can be substituted in place of the absinthe spoon but this looks somewhat ghetto. You will not want to use this improvisation in view of any girl you are trying to impress so invest the $10 and get an absinthe spoon. Slowly pour cold water over the sugar cube and into the glass until it is a 4 to 1 ratio with the absinthe. Stir the contents of the glass and witness the green fluid turn a milky white in a process called louching. This occurs because the essential oils in absinthe do not mix with the water.
Czech Method: Set up in the same manner as the traditional method but pour the absinthe over the sugar cube into the glass instead of straight into the glass. Now set the sugar cube on fire and allow the all the melted sugar to flow into the glass. Proceed by pouring the water and stirring. The caramelized sugar adds a tang and you can’t beat the presentation.
Alternatively, absinthe can also be used in various cocktail recipes. Try them in jello shots as well.

The Original Sazerac Cocktail
Ingredients
1 sugar cube or 1 teaspoon of granulated sugar
3 dashes Peychaud's bitters
60ml cognac
Splash of La Fée Parisian Absinthe 68%
Strip of lemon peel
Method
Pack a heavy-bottomed tumbler with cracked ice and allow to chill. In a cocktail shaker mix cracked ice, sugar, Peychaud's bitters and cognac.
Empty the glass of ice and dash in the La Fée, twirl the glass rapidly and shake out the absinthe. Enough of it will cling to the glass to impart the desired flavour. Strain into this glass the cognac mixture. Twist a lemon peel over the glass, but do not put it in the drink.
If you cannot use cognac, rye whisky or sometimes bourbon makes an excellent alternative.

Pour sugar over ice and then pour the Absinthe over the sugary ice. It makes it change from green to clear if you do this, which is just awesome.
