For double recipe potato salad to serve 6 (x2 = 12).

No, I don't think they shrink either, but they might puff up a little from absorbing some of the water....and I don't think I asked for a smartass answer, either.

depends on how big the potatoes are, 1 decent size potatoe per person. I would go with about 8 standard russet or like 12 red potatoes

Wow, maybe potatoes are bigger where I live!!
I was going to say 6 to 8 decent sized potatoes, as many as 12 or 15 if they're really small....But then I saw everyone else's answers!!
I think you'd better just measure your potatoes, since the size can vary so much!
But when it comes to potato salad, more is always better!

That depends on the size of the potatoes. If potatoes are average size I would guess about 20.

They even have one that goes from liquid to dry measure.and vice versa!..and one that will answer the kind of question you have asked. Also, be sure to include size of the potatoes you are using.
