Wouldn't the end product of shoestringing be much thinner than julienning?

It appears that they are the same

shoestring potatoes:
long, sticklike slices of raw potato that are deep-fried until crisp.

Shoestringing is more like a McD's fry. Julienned is between that and shredded. Depends on what you want to do with it.

Julienne is usually very thin ,shoestring is slightly thicker. Not much though.
