Flat cookies could be caused by several things, too much baking soda, not enough flour or an oven that is not at the right temperature. So be sure to measure carefully and preheat your oven to the correct heat before putting cookies in. If the cookie dough seems a little too soft, try chilling it in the fridge for a while before making your cookies. Remember to cover with plastic wrap before refrigerating.

Always put the cookie dough on a COOL cookie sheet. Have 2 cookie sheets prepared, & as one comes out of the oven put the next one in. Then take the hot cookies off the hot cookie sheet, & let that sheet cool completely BEFORE filling with more cookie dough.

I've had great success w/ all of my cookies using the concept Alton Brown uses to make 3 kinds of chocolate chip cookies - the chewy, the puffy and the thin. Sounds like you are getting the thin... a flat, crisp cookie. This recipe uses all butter and the dough is not chilled. The puffy uses butter flavored shortening rather than butter and the dough is chilled. To me, this is too puffy and cake-like. The one I like is the chewy which uses MELTED butter and the dough is chilled. It isn't flat but not puffy either and stays moist and chewy. Yummm. This concept works for me with chocolate chip, peanut butter and oatmeal cookies with equal success...melted butter and then chilling the dough.

use a sharp cookie cutter, don't use a glass or anything else that will flatten the edge of the cookie. if you do, it is hard for the layers in the cookie that occur naturally to rise

You need a cookie with a different butter to flour ratio.
Its the recipe. also make sure youre butter is soft but not so soft it is melting.

You may need a little flour added. I like to feel the dough between my fingers if it feels to sticky then I add a little more flour.
