Bubble and squeak (sometimes just called bubble) is a traditional English dish made with the shallow-fried leftover vegetables from a roast dinner. The chief ingredients are potato and cabbage, but carrots, peas, brussels sprouts, and other vegetables can be added. The name bubble and squeak is used in (at least) South East England — it is also Cockney rhyming slang for "Greek". In other parts of the country the dish may be referred to as bubble and scrape or fry up.Bubble and squeak is similar to the Irish dish Colcannon.
Here is one recipe:
1 C cold mashed potatoes
1 C cooked cabbage
salt and pepper to taste
a little oil for the pan
Combine all ingredients, and cook in hot frying pan with a little oil until well browned. Kylie and Anita like to serve this with grilled bacon and tomatoes for a hearty breakfast.

Bubble and Squeak
3 large unpeeled, potatoes, boiled
4 cups cabbage, chopped, parboiled and drained well
1 small onion, chopped
4 slices bacon, cut up and fried
Chop cooked, unpeeled potatoes.
In large skillet, fry bacon; drain on paper towel. add onion and sauté until golden brown.
Add chopped, cooked cabbage and chopped, cooked potatoes. Sprinkle bacon bits over top surface. Allow potatoes to become golden brown on bottom over medium heat, about 20 minutes or less.
Invert skillet over large serving plate. Garnish with parsley, if desired.

Yes, bubble and squeak.I think it got it's name from the sound that the veggies make durring the re-heating process,they "squeak and sound bubbly".Serve this with grilled sausages and potato bread for a
authentic tasting meal,Don't forget the stout beer,like Guinaess to wash it all down.
