This is my favorite!!!
Bacon, Mushroom, and Cheese Omelet
Serves 1
3/4 Cup Eggbeaters
1-1/2 Tbsp Unsalted Butter
3 Strips Crisply Fried Bacon
1 (4 oz can) Sliced Mushrooms, drained
1/4 Cup Mozzarella Cheese, grated
1 Scallion, sliced thin, for garnish
Instructions:
In a large nonstick frying pan melt the butter over medium-high heat. Add the eggs and scramble slightly. Allow the eggs to coat the pan and cook evenly. Crumble the bacon into the eggs, add the mushrooms and cheese, and cook for 1 minute.
Carefully slide 1 end of the omelet onto a plate while folding the other end over on top, like a taco. Garnish with scallions and serve immediately.

Thank you for your question.
My favourite breakfast is cereal followed by a cooked breakfast consisting of bacon, eggs and sausage with a hash brown. I have this with some orange juice and some fresh brewed coffee with milk and sugar.
This is an indulgence breakfast which I can't afford to have too often.

HAM & EGG CASSEROLE
1/2 pound Virginia ham, thinly sliced
1 dozen large eggs, hardcooked, quartered or sliced thick
3 cups white sauce (see recipe below)
1 cup grated Swiss cheese
Preheat oven to 375 degrees. Lightly grease a large baking dish.
Arrange a layer of ham slices, then
eggs, in each dish. Pour white sauce over top. Sprinkle with grated
cheese. Bake at 375 degrees for 15
minutes or until cheese melts and is bubbly and golden. Serve over
toast points or toasted English
muffins. Serves eight.
White Sauce: Heat six tablespoons butter with one or two grated or
minced scallions. Do not brown.
Gradually blend in six tablespoons flour. Remove from heat and stir in
three cups hot milk. Return to
heat; stir until thickened.

I love going to either Denny's or Village Inn and getting a 2 egg (over medium) hashbrown (crispy) and bacon (also crispy) breakfast w/wheat toast (toasted, not warm bread w/butter on it) and a side of gravy (used on the biscuits & gravy) then I cut everything up (except the toast) add some hot sauce and chow down!!! I use the gravy to dip my toast in. YUM YUM BOOTSIE! Can't do it too often anymore, but was fun when I was young and had a higher metabolism!!!

A slice or two of oak smoked cheshire longback,two fried free range eggs, two old english pork sausages two halves of home grown toatoes, two slices of home made soda bread, lightly toasted and spread with butter hand churned by the fat lady at the farm.
four field mushrooms ,picked on the way to the paper shop,lightly fried in the fat off the bacon, and a pot of of freshly brewed tea.
sheer bliss.

Crisp bacon, grits and gravy, and a biscuit or two to fill up the empty spaces. I wash that down with a big glass of tomato juice and a couple of cups of black coffee.
Not exactly doctor approved, but then again, I don't eat it all that often, either.

French toast or pancakes or waffles, sausage links,scrambled eggs with cheese. Plenty of milk to wash it down. I only have this on the weekend though. Through the week it is usually cereal,bacon and a toasted bagel or fruit and a toasted bagel.

I liked Burger King's croissant sandwiches when they first came out. They were really good, but really fattening. I used to eat three of them, two bacon, egg and cheese ones and one sausage egg and cheese. (I didn't like the ham ones, since it was drippy and wet for some reason.) Burger King quit making them the fattening way some time ago and now the 'healthier' croissants aren't very good.
