For vintage wines, use sites like winecommune.com or winebid.com to see if it is for sale.

You can also subscribe to the valuation service on cellartracker.com. The main site is free and the valuation service is modestly priced.

For spirits, they don't really age in the bottle. You can assume the value is the same as the current retail value regardless of how old a particular bottle is.
