OK, now to your question. Perhaps he is stunned about it or the odor is horrendous.
Try changing your cats diet. Give him some of the hairball remedy stiff and make sure he has access to fresh grass.

maybe because it has a problem with farting and it hurts when it farts. It may have a digestive problem. U should change the food it eats or take it to a vet.

Mine doesn't hiss. but he jumps and turns around and acts like "what the heck was that?" It is funny to see.
I think it just starles them; they don't know its them doing it.
