I started with $100 a few weeks ago at Sci-Fi Casino (online) and got down to my last $2. On my last spin I hit a bonus round and by the time I was done a few hours later I cashed out $1000. (I was up a lot more than that at one point, but I won't embarrass myself by saying how much I lost back lol)

I started with $30 and ended with $30 four hours later. I consider that to be very successful as I only play because I like the game. I DON'T play to make money. It is just entertainment for me.
In the same venue, another time I started with $500 and ended with $480 after 3 days. Again, covering meals and entertainment for 3 days and only going down $20, that's a good weekend vacation.

I started my online poker bankroll with 100 dollars and have won tens of thousands of dollars without redepositing. Pretty rad.
Closer in line with what you mean, I entered a 50 dollar tournament as a joke, it was just a fun thing amoung friends and I didn't really take it seriously, yet won first for around 500 dollars. Not bad for a joke.
Seems like whenever I enter a tournament and take it less seriously I end up doing better than when I concentrate super hard.
I wish I had know about sites like http://www.ultimatepokerbankroll.com or http://www.fortune-poker-rakeback.com back when I started with the 100 dollars though, I could've had a comfortable bankroll instead of playing on crappy sites like Party for ages with their lousy bonuses.

This did not happen to me, but the most famous instance I know of is Chris Ferguson, winner of the 2000 world championship in Poker. He started with $1 and turned it into $20k. There have been many articles and stories written about him doing this. I am including a link to his chatting about this.
