eventually go mountain biking, once i get really good.

Probably a hard tail. Put on some road tires and when you are ready for some off road challenges, change the tires to some with a more aggressive tread. Here is a link to get you started.

I agree with going to a bike shop. You can get a better quality bike with (usually free) service adjustments or even a warranty.
Plus, a shop would let you take a few rides on various types of bikes as opposed to trying one out in a department store. Many department store bikes are not actually assembled correctly in the first place. Some of the larger sporting goods stores may have a good selection of rides to look at and have a service area so the assembly/maintenance should be sufficient to your needs. I would look for something I can easily afford and then get the one that is a step or two higher in quality/options.
A hardtail bike has a front shock with a rigid rear and works well for most condtions. Some shocks have a lockout mechanism that can keep the shock from damping during smooth street rides. This can slightly increase your power to the road, instead of being soaked into the shock. Not too noticable, unless on a really long ride.

Morenita, go for a hardtail. which bike will depend on your budget.

You can try Trek, Specialized, Kona, Marin, Jamis for nice bikes (Rocky Mountain is a very good brand, I don't know about their prices), and there are, of course, more expensive options.

Ibex is also pretty good, from what I hear, but you must buy it from them directly. I think if it's your first bike, a bike shop might be a good choise, because they can help you get a bike that fits you, give you some free tune ups probably.
