TURKEY MEATLOAF
1 pound ground turkey
2 eggs, lightly beaten
1/2 cup chopped fresh mushrooms (optional)
1 1/2 cups Italian seasoned bread crumbs
1 (1 ounce) envelope dry onion soup mix
2/3 cup ready-to-serve creamy tomato soup, divided
1/4 cup ketchup, divided
1/4 cup barbeque sauce, divided
2 tablespoons Worcestershire sauce, divided
chili powder to taste

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a bowl, mix the turkey, eggs, mushrooms, bread crumbs, soup mix, 1/3 cup creamy tomato soup, 2 tablespoons ketchup, 2 tablespoons barbeque sauce, and 1 tablespoon Worcestershire sauce. Mold the mixture into a loaf shape, and place in a baking dish. Sprinkle with chili powder.
In a separate bowl, mix the remaining creamy tomato soup, remaining ketchup, remaining barbeque sauce, and remaining Worcestershire sauce. Set aside.
Bake loaf 45 minutes in the preheated oven. Top with the sauce, and continue baking 15 minutes, to a minimum internal temperature of 165 degrees F (74 degrees C).

Ground Turkey Meatloaf
Ingredients:
2 pounds ground turkey meat
2 cups (about 4 slices) fresh whole wheat bread crumbs ( Click Here for the best healthy whole wheat bread recipe)
1/2 cup milk
1/2 cup minced onion
2 eggs
2 teaspoons salt
1/4 teaspoon pepper
1. Preheat oven to 350 degrees Fahrenheit. In a medium sized bowl mix all of the above ingredients.
2. Use your hands to mix the meat and other ingredients thoroughly, but be sure to wash your hands with soap afterwards.
3. Spoon the meat mixture into a 9" by 5" loaf pan (the same kind you use to bake bread.)
4. Use the spoon to level the top of your meatloaf. Then put the meatloaf in the oven and bake for about 80 minutes or an hour and 20 minutes.
5. After removing the meatloaf from the oven, let it stand for 5 minutes at room temperature to cool, and then pour out and discard all fat drippings.
Cooking Tip: Don't try to slice or remove the meatloaf from the pan right away. Instead allow it to cool first so the meatloaf slices won't crumble.

Meatloaf
2.5. hamburger or ground turkey
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato paste plus 1 1/2 cans water, mixed
Topping
1 can condensed tomato soup
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute
In bowl, combine beef, onion, garlic, eggs, and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Pour water and tomato paste mixture over and bake for 30 minutes at 350. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.

QUICK TEX-MEX GOULASH 1/2 lb. elbow macaroni 1 lb ground sirloin 1 small onion, finely diced 2 c. tomato juice 1 pkg McCormick's Taco Seasoning 1 can black beans, drained and rinsed 1 can sweet corn, drained 2 c. shredded mozzarella cheese sour cream sliced black olives chopped green onions Prepare the macaroni according to the package instructions. (Note: Do not rinse the noodles. The starch left on them helps bind the goulash so it doesn't get too runny.) Saute the sirloin and onion in a skillet until the meat is brown and the onions become translucent. Drain the fat off. Add tomato juice and the taco seasoning to the meat. Bring to a boil then reduce heat, cover, and simmer for about 10 min. In a large pot, combine the noodles, meat mixture, corn, beans, and shredded cheese. Allow this to simmer for about 20 minutes or until heated through and the cheese is melted. You may need to add up to a cup more of the tomato juice if it's too dry. To serve: place a helping of goulash on a plate then garnish with sour cream, black olives, and green onions. It's nice to set the garnishes on the table as when serving tacos. Don't be afraid to use whatever garnishes you'd use on a taco. Some like green peppers, jalepenos, salsa, fresh diced tomatoes, crushed torilla chips, cheddar cheese. Get creative! This dish is so easy even someone a little intimidated with Tex-Mex cooking can really shine and look like a pro!
