I am not sure that protein "fibers" would actually be the best description of what occured. Yes, you can get fiber from protein sources like soy (which you should avoid eating).

But what George had was amyloidosis which is a mass of extra-cellular protein molecules arranged in a cross-beta sheet quaternary structure. Meaning the molecules were not just strands or fibers, but a much more complex structure. The "protein fibers" terminology was just the journalists covering the story "dumbing down" the terminology for the readers.
