PEANUT BUTTER FROSTING

1 pkg. (16 oz.) powdered sugar (about 4 cups)
1/2 cup (1 stick) butter or margarine, softened
2 tsp. vanilla
1/3 cup milk
1/2 cup peanut butter, creamy

BLEND sugar, butter and vanilla in large bowl. Gradually add milk, beating with electric mixer on low speed until well blended. If frosting becomes too thick, beat in additional milk by teaspoonfuls until frosting is of spreading consistency.

USE to frost your favorite cake or cupcake recipe.

Makes enough to frost tops and sides of 2 (8- or 9-inch) cake layers, top and sides of 13x9-inch cake, tops of 3 (8- or 9-inch) cake layers or 24 cupcakes.

Frosting
1 lb powdered sugar
1/2 cup shortening
1/2 cup peanut butter
1 tsp. vanilla
1 egg white (pasteurized or reconstituted powder)
Milk (enough to make a creamy frosting)

Put powdered sugar, shortening, peanut butter, vanilla, and egg white in a bowl. You can mix by hand or by mixer on medium speed. As you start mixing, start adding milk a little at a time. When your frosting is creamy but not too stiff, your frosting is done.

Spread on cooled cake. If cake is still warm to touch, don't put frosting on because it will warm up the frosting and start sliding off the cake.
