Butterscotch Cheesecake:
INGREDIENTS:
Crust:
1/2 cup butter, soft
1 cup flour
1 tablespoon confectioner's sugar
1/2 cup finely chopped pecans

Cheese Filling:
8 ounces cream cheese, softened
1 cup confectioner's sugar
2 pints whipping cream, whipped, or whipped topping
.
Butterscotch Filling:
2 packages butterscotch pudding
3 cups milk
.
Topping:
2 pints whipping cream
1 tablespoon sugar
PREPARATION:
Crust: Cut butter into flour. Mix thoroughly then add pecans. Spread mixture in 13x9x2-inch pan. Bake at 350° 15 minutes. Cool.
Cheese filling: Mix together cream cheese and sugar. Add whipped cream or whipped topping (9 ounces).
Mix thoroughly. Spread on cooled crust. Chill in fridge.
Butterscotch filling: Cook pudding mix with milk, cool, spread on set chilled cream cheese layer. Chill in refrigerator.
Topping: Whip whipping cream until foamy and add sugar. Whip until light peaks form. Substitute whipped topping, if desired.

Butterscotch Marble Cake
1 white cake mix
1 sm box butterscotch instant pudding
1/4 c. cooking oil
4 eggs
1/2 c. chocolate flavored syrup
Grease and lightly flour a 10" fluted tube pan.In a lg. bowl, combine cake mix,pudding mix, oil, eggs, and 1 c. water. Beat at low speed until combined, then at medium speed for 2 minutes. Reserve 1 1/2 c. batter.Turn remaining batter into pan. Stir together the reserved batter and the choc. syrup. Pour choc mix over butterscotch batter and swirl with a knife to marble. Bake 350 degrees for 60 min or until done. Cool 15 min on a wire rack then invert on plate, remove pan, and cool.

I love butterscotch too! I have a really easy recipe. Make a box of butterscotch pudding according to the pie recipe on the box, and put it in a graham cracker crust. You can cover with whipped cream if you like. Its good, its easy and its not super fattening.

1/3 cup butter or margarine, softened
3 eggs, divided
1 cup chopped pecans, toasted
1 cup butterscotch-flavored chips
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
1 teaspoon vanilla extract

DIRECTIONS:
Preheat oven to 350 degrees F. In large bowl, beat cake mix, butter and 1 egg at medium speed until crumbly.
Press evenly into greased 13x9-inch baking pan. Bake 15 minutes. Remove from oven; sprinkle with pecans and butterscotch chips.
In small bowl, beat EAGLE BRAND®, remaining 2 eggs and vanilla. Pour evenly over chips.
Bake 25 to 30 minutes longer or until center is set. Cool thoroughly. Cut into bars. Store covered at room temperature.

OH HENRY BUTTERSCOTCH
Whole graham crackers
3/4 cups butter or margarine
2/3 cups brown sugar
1/2 cup of milk
1tsp vanilla
1 1/4 cups graham crumbs
line 9*9 inch pan with whole graham crackers
Combine butter, sugar, milk , vanilla bring to a boil and simmer for 5 min remove from heat
stir in crumbs pour over crackers
cover with layer of whole graham crackers ice with butter or icing
ICING:
1 1/2 cups icing sugar
3 tbsp butter or marg
1 1/2 tbsp water
1/2 tsp water
BUTTERSCOTCH BROWNIE
1/4 cups butter or marg
1cup brown sugar
1 egg
1/2 tsp vanilla
3/4 cups flour
1tsp baking powder
1/4 tsp salt
1/2 cups chopped walnuts
melt butter in pan add it to sugar in a bowl. add egg and vanilla stir. measure in flour, baking powder, salt and nuts.
spread into 8*8 inch pan bake at 350 for 30 min
ICING;2 tbsp butter or marg
1/4 cup brown sugar
2 tbsp milk
1 cup icing sugar
combine 1st 3 ingred add icing sugar and stir. add more sugar or milk to make smooth spread
