quick chicken curry

Change to: servings US Metric
4 boneless skinless chicken thighs, cut into bite-sized pieces
1 tablespoon vegetable oil
1 small onion, chopped
2 cloves garlic, minced
1 green pepper, chopped
2 tablespoons medium curry paste (I use Patak's Curry Paste)
5-6 new potatoes, cooked & cubed
1 cup frozen green peas
1 (14 ounce) can coconut milk, well shaken
In a deep frying pan, brown chicken thighs in oil.
Remove chicken from pan& keep warm.
Saute onion and green pepper until soft; add garlic and saute 1 minute.
Stir in curry paste and cook 3-4 minutes.
Add chicken, potatoes, peas and coconut milk; simmer 10 minutes or until curry sauce has thickened to desired consistency.
Serve over rice.

Chicken Curry
1 whole chicken
2 lge onions
125g butter
2 tbs sugar
1 tbs curry powder
6 heaped tbs plain flour
2 tsp salt
1 tsp pepper
6 cups chicken stock
Chop up chicken. Chop onions & sauté in melted butter for 5 mins. Add curry powder, flour, salt & pepper, fry for 2 mins. Add sugar, stock & stir until thick. Add chicken & simmer 15 mins.

HI NITA! This curry chicken recipe is how my hubby taught me he is from Trinidad, you can use legs/ breasts, thighs cut into bite size pieces.WASH meat first in cold water with a little vinegar/ rinse well . season with salt/ pepper / chopped garlic/onions/little soya sauce let marinate for 1/2 -1hour.get a big pot /wok .in a cup add 1 Tbsp. curry add just enough water to mix it like a paste if to thick add bit more water add 1 tsp. masala if you have it. in wok / pot add a little oil let it get hot then add curry mix to it let it burn down a bit till curry gets a little thick add chicken stirring until meat is coated good, keep an eye on it so it dont burn ,add enough water to cover all the chicken / cut up a few potatoes and add to pot let cook until potatoes are done. serve with rice/ roti / macaroni casserole . which ever you prefer. hope you try it if you can get LALAHS CURRY ITS GREAT OR JAMAICAN NOT AS STRONG A SMELL AS OTHER CURRY depending where you live GOOD LUCK AND HOPE YOU ENJOY.

Easy Chicken Curry
Original recipe yield: 6 servings.
Prep Time:15 MinutesCook Time:1 Hour Ready In:1 Hour 15 MinutesServings:6 (change)

INGREDIENTS:
6 skinless, boneless chicken breast halves - cut into strips
1/4 cup olive oil
2 large onions, diced
1/3 cup curry powder, or to taste

DIRECTIONS:
Heat oil in a large skillet over medium heat. Add onion and saute until soft and golden brown. Slowly stir in curry powder. Once ingredients are blended together, add chicken breasts. Cover skillet and simmer over medium low heat for about 45 minutes or until chicken is cooked through and no longer pink inside.
Remove cover from skillet and cook for an additional 15 minutes, until sauce reduces. (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!)

Cheesy Chicken Curry Casserole:
Prep: 15 min., Cook: 40 min., Stand: 5 min.
2 cups chopped cooked chicken
2 cups broccoli florets, cooked
1 (10 3/4-ounce) can cream of chicken soup
1 (8-ounce) container sour cream
1 cup (4 ounces) shredded Cheddar cheese
3/4 cup milk
1 teaspoon curry powder
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/8 teaspoon ground red pepper (optional)
1/2 cup fine, dry breadcrumbs
2 tablespoons butter or margarine, melted
Combine first 9 ingredients and red pepper, if desired. Spoon into a lightly greased 11- x 7-inch baking dish.
Bake at 350° for 30 minutes or until hot and bubbly. Stir together breadcrumbs and melted butter; sprinkle over casserole, and bake 10 more minutes. Let casserole stand 5 minutes before serving.
Note: Freeze unbaked casserole, omitting breadcrumbs and butter, for up to 1 month, if desired. Allow to stand at room temperature 1 hour. Bake at 350° for 1 hour and 30 minutes or until hot and bubbly. Stir together breadcrumbs and melted butter; sprinkle over casserole, and bake 10 more minutes. Let stand 5 minutes before serving.
Yield: Makes 6 servings
