i couldn't pick one. i have collected recipes for many years from many different people and restaurant owners as well as created my own. i have over 2,000 recipes in my cookbook collection ( 6 large binder notebooks) of what i call the best of the best. there are so many 1,000's of recipes that are great that i don't have. besides watching major league baseball ( i have 12 fantasy baseball teams) my passion is to cook!

Pasta Alfonso a very special vegetarian pasta that takes about 2 hours to prepare.
Seafood Curry the perfect marriage of sweet a little sour and spicy.
Chili con carne i'ts a simple dish but you can get verry creative with it. I don't think i've ever made the same recipe twice I'm always adding new and different stuff to it.
Jambalaya: A recipe I got from a real New Orleans chef, modified it to my own.

It is so simple. When I am in the Caribbean, I put on a snorkel mask and fin. Once your eyes are trained to spot lobsters, chances are that I Will find lobsters in my favourite reefs. I put on a pot of sea water and cook them until they are red. Split the lobster in two after they are cooked and remove the intestines--the long string along the top of its back. Pour melted cheese on the lobster, or ground garlic in butter and chopped celery. Serve with salads and you have fresh Caribbean lobster on a half shell. Serve with wine facing the sunset on the aft deck. Kings do not live better.

Yes, I am. Was even paid for a few years to do it.
My signature dishes are...
Steak Theodore (Filet Mignon, wrapped in back, covered with fresh crab meat and topped with hollandaise sauce)
&
Chicken Cordon Bleu (Chicken breast coated with bread crumbs, spices, and stuffed with swiss cheese and ham, I prefer Canadian bacon actually, and topped with hollandaise sauce)
I have literally made those two dishes hundreds of times over the years, and I'm sure I could make them with my eyes closed.

Thai Green Chicken
Jasmine Rice
Shrimp pan fried with brown sugar and chilli
Shrip pan fried with garlick and ginger
Vegetable curry
followed by;
Slices of large apple cored and peeled soaked in Cointreau and coated in Brown Sugar
Fresh Lychees plaved in the hole left by coring
and either fresh heavy cream or ice cream piped around the lychee.

My husband thinks that I am, and that's what counts. He once told friends that, "If all we had to eat was paperclips, she could figure out a way to make them taste good." ;-)
My signature dish is Swedish meatballs over rice, served with a tossed salad and some garlic cheese bread. People have told me that they also like my lasagna.

My granny and mamaw's are good ole' southern cooks and they taught me everything they know.
My signature dish is comfort food in general...fried chicken, green beans, collards, cornbread, blackberry pie and so on.

Penulata (italian) its a bread loaf stuffed with beef, onions, trace amounts of cheese and olives, with an eggyolk brushed and sesame seeded crust
add a bowl of homemade chicken soup and a bottle of Verdicchio and viola....
what would You like for dinner??
