Most wood ignites at around 450 deg, so no fire or smoke.
But the chemicals used in treating the wood and/or gluing the plywood may release toxic gases.
I just don't think it is a good idea to do.

At 275 it won't catch on fire. My husband bakes a Turkey in brown paper sacks it smells at first he cooks it at 350 and now problem, paper and wood ignite at certain temps and 275 is not one of them

275º is not hot enough to ignite a piece of wood in only 5 minutes. However, don't tell your insurance company it was me who said so.

many people cook on cedar planks in the oven - they normally soak the plank in water first so that it helps to steam the food. they also use mesquite planks to cook with.
.......but I don't know about plywood
