you may be cooking too fast ..try turning down the heat

The oil is probably too hot. If that does happen, though, you can put the chicken in a 350-375* oven to finish cooking the meat without burning the breading.

Your heat is too high for too long. Start out as usual. Everytime I turn my chicken over I turn the heat down a tad. This allows the meat to cook down to the bone without burning the outside.

if cooking chicken on stove top ,cover and put burner on low and if cooking in oven, cover with foil and cook slowly 350 degrees.
