Apple Crisp

3 pounds tart apples
2 tablespoons lemon juice
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup all-purpose flour
1/3 cup granulated sugar
1/3 cup rolled oats
4 tablespoons cold butter (1/2 stick)
1/2 cup chopped walnuts or pecans
PREPARATION:
Peel, core and chop apples, toss in a bowl with lemon juice to prevent darkening. In a separate bowl, combine brown sugar, cinnamon, and nutmeg; stir into apples. Set aside.
In another bowl combine flour, sugar and oats.
Cut butter into 8 pieces, and cut butter into flour until mixture looks like crumbs. Stir in nuts. Butter a 10 X 10-inch baking dish. Spread apples in bottom of baking dish then sprinkle with flour mixture. Bake at 375° for 30 to 45 minutes, or until apples are tender and topping is lightly browned. Serve warm or at room temperature.

Roasted Chicken with Fried Rice Stuffing and Scallion Oil

Recipe Summary

Yield: 4 servings

1 (5 to 6 pound) whole chicken, washed, patted dry (preferably organic)
2 1/2 cups cooked calrose/sushi rice
1 tablespoon canola oil
1 tablespoon minced garlic
1 tablespoon minced ginger
1/2 cup sliced scallions
1 minced jalapeno (or 2 serrano chiles)
Salt and black pepper to taste
Garnish with scallion oil, recipe follows

Pre-heat oven to 550 degrees. Rub chicken with oil, then salt and pepper. Place chicken, breast side up, in the oven and cook for about 25 minutes or until golden brown. May have to rotate the chicken for even coloring. As chicken is cooking, in a saute pan, add a little oil and quickly brown the garlic, ginger, scallions and jalapeno. Add mixture to cooled rice. Rice should end up a bit sticky. Check for seasoning. When chicken is fully browned, stuff with rice and turn the oven down to 300 degrees. Cover with foil to prevent burning. Chicken will take another 45 to 55 minutes. Chicken is done when one can move the wing back and forth with great ease. Allow chicken to rest for 10 minutes before serving.

SCALLION OIL:
2 bunch scallions, green part only
1 cup spinach leaves
1 teaspoon salt
1 teaspoon sugar
2 cups canola oil


In a pot of boiling, well salted water, blanch scallion and spinach for 30 seconds and shock in ice bath. Squeeze out water and place in blender cup with salt and sugar. With blender on high speed, add canola oil in a steady stream. Blend for 5 minutes until cup gets slightly warm. This oil may be done a day in advance and will keep in the refrigerator for at least 1 week.

Baileys Irish Cream Truffles

12 ounces Semi-sweet chocolate morsels
1/4 cup Heavy cream
1 tablespoon Sweet Butter
2 Egg yolks
1/4 cup Baileys Irish Cream

Melt chocolate, Baileys and heavy cream together over very low heat. Whisk in yolks, one at a time; mixture will thicken. Whisk in butter.

Refrigerate overnight, or until firm. With spoon make small balls. Roll in powdered sugar, cocoa, chopped nuts, sprinkles, etc.

Really tasty and simple, one tomato chopped (prefer one right from a garden), crushed garlic,basil,sage, sea salt, feta cheese, olive oil. mix all together (portions according to taste) heat a few seconds in the microwave or eat cold. Mmmmm!!!! Very tasty and healthy, eat alone or on crackers
