Always use the lighter colored oils when frying anything. You can use peanut oil, vegetable oil, or canola oil.
Stay away from olive oil, as it becomes too hot and will smoke.
Now that I've answered that, can I have some fried chicken :)

Vegetable oil is the best to use for frying chicken. Just don't cook on too high of a heat. Try soaking it in Louisiana hot sauce and buttermilk over night and then roll it in flour seasoned with garlic salt salt and pepper right before you fry it. You want it hot enough for it to cook well but not so high that it burns the outside and the inside is raw. I would say try medium heat and let your oil heat up before you put your chicken in the skillet.

Canola Oil, or Corn Oil (as well as others) work fine because they have a high Smoke Point (they will sustain a higher temperature before smoking). Olive oil, on the other hand, has a lower smoke point, thus is not the best for frying chicken.

In the big deep outdoor fryer - use peanut.
But if you are frying on the stove-top then use olive oil. It enhances flavor like crazy, and it is so good for your heart and body. You can use olive oil with no guilt - because it's a good fat that help lower bad cholesterol.

I use vegetable oil and i don't fry my chicken on top of the stove I fry it in the oven it doesn't splatter and it cooks faster

Almost any type of oil can be used except for Extra Virgin Olive Oil.
Healthiest is probably peanut oil.

..you may want to look into this... but peanut oil has a high "smoking point", meaning that it can get hotter than most other kinds of oil before burning.

I use mazola. I had ran out of cooking oil & already had chicken prepped--had some lard so I used that. worked just as well
