Baked Rice Pudding
Ingredients:
4 large eggs
1/2 cup granulated sugar
1/2 tablespoon vanilla extract
1 12-ounce can evaporated milk
1/2 cup milk
1 1/2 cup cooked rice
2/3 cup raisins or dry cranberries
1/2 teaspoon cinnamon
1/8 teaspoon ground nutmeg
Directions
1. Whisk together the eggs, sugar and vanilla until well-combined. Add the milks. Stir in the cooked rice, and the raisins or cranberries. Transfer the mixture to a 2-quart baking dish.
2. Place the baking dish in a larger pan on a rack in the center of the oven. Pour very hot water in the other pan so that the baking dish is sitting in water about one inch deep.
3. Bake for 30 minutes at 325 degrees. Stir the pudding, sprinkle with the spices, and then bake for another 30 minutes. The pudding is baked when there is still a little jiggle in the center and a knife inserted in the center comes out nearly clean. (Note: The depth and the color of the pan seem to make quite a difference in the time required to bake. Check the pudding for doneness early.)
4. Cool before serving.
Tips for success:
1. The eggs need to be well-combined so that they are dispersed in the pudding. Whisk well but not to the point that the mixture is foamy.
2. Do not over bake the pudding. The pudding will be smoothest if barely set. It should be removed from the oven while there is still some jiggle as you shake the pudding gently.
3. While you can make this pudding without the fruit, we think the cranberries and raisins make this pudding special.

Baked Rice Pudding
2 cups milk
1/2 cup long grain rice
1/2 cup raisins
Bring to a boil, reduce heat to lowest setting, cover and simmer for 15 to 20 minutes, until rice is tender and milk is essentially all absorbed. Don't take the cover off meantime and lose the steam. Add 1/2 stick (1/4 cup) butter or margarine and stir in until all is melted.
Beat together:
2 eggs
1 can condensed milk
1/2 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
Add the rice gently folded in, and pour into casserole or baking dish. Bake at 325 Fahrenheit for about 30 minutes, fold in nutmeg, cinnamon or Pennsylvania Dutch spices and bake another 15 to 20 minutes, until completely set. Cool somewhat before cutting up into squares to serve. Very good chilled.

Classic Rice Pudding
Ingredients

2 large eggs
1/3 cup brown sugar
1/2 tablespoon vanilla extract
1/2 teaspoon rum extract
Directions
1. Bring the rice and water to boil in a medium, covered saucepan. Reduce the heat and let simmer until the rice is soft and the water is absorbed, about 20 minutes.
2. Stir in the milks, granulated sugar, cinnamon, and salt. Bring the mixture to a simmer.
3. In a medium bowl, whisk the egg yolks, eggs, and brown sugar together. Add about one cup of the hot rice mixture, stirring as the rice is added, to temper the egg mixture. Stir the egg mixture into the rice mixture in the saucepan and continue cooking and stirring until the mixture is bubbly and thickens. Add the extract.
4. Transfer the pudding to a bowl and let it cool on the counter for 20 minutes and then refrigerate. Serve chilled.

We like rice pudding. I used to make it the old fashioned way too. Rice putting is now something I make only when I have left over rice. If you like the recipe you have, use those flavors and seasonings. Put some left over cooked rice in a microwave safe bowl. Add a handful of raisins or dried cranberries or chopped apples. Add your seasonings to taste. Beat an egg or two in some milk. Stir in brown sugar or honey. Pour it over the rice and cook it in the microwave in three minute increments until done.

Your gonna need: 2 cups of cooked white rice 12 oz of evaporated milk 1 tablespoon of ground cinnamon 1/2 cup of white sugar Directions: 1.Combine the rice, cinnamon, milk, and sugar in a saucepan over medium heat. Stir occasionally and bring mixture to a boil; cover and reduce heat to low. Cook until thick and creamy, 5 to 7 minutes.
