You magazine chicken and mango casserole. 2kg chicken thighs, skinless/boneless, 2tbsp olive oil, 2tbsp butter, 1 large onion, 1 mango, peeled/diced, 1tsp lemon zest, 1/2tsp ground coriander, 1/2tsp ground cinnamon, 250ml chicken stock, 250ml single cream, 2tsp flour, 1tbsp lemon juice, 1tbsp water, 375g plain rice. Preheat oven 190C. Brown chicken in pan with oil and butter. Put in casserole dish. Fry onion til soft and add to chicken. Fry mango over low heat, turning carefully, for 4 mins. Stir in lemon zest, coriander, cinnamon, chicken stock. Boil, pour over chicken. Cover and bake 1 1/2 hours. Take out chicken and keep warm. Turn up heat on hob and boil liquid in casserole dish, let it reduce and thicken, turn down a little and stir in cream. Cook rice. Mix together flour, lemon juice and water and beat into sauce. Let it simmer for 15mins, return to chicken pieces. Ensure chicken cooked throughout and serve with rice.
