Creamed Spinach
2 lbs fresh spinach, washed and tough stems removed
2 tablespoons unsalted butter
1/2 cup finely chopped onions
1 teaspoon minced garlic
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon nutmeg
1/2 cup yogurt
bring a pot of salted water to a boil over high heat.
Add the spinach and cook for 2 minutes.
Drain in a fine mesh strainer, pressing with a large spoon to release as much water as possible.
Finely chop and set aside.
Melt the butter in medium saute pan over medium-high heat.
Add the shallots and garlic and cook, stirring, until soft and fragrant, about 2 minutes.
Add the spinach and cook, stirring, just until the liquid is released.
Add the salt, pepper, and nutmeg; cook about 4 minutes.
Remove from the heat and stir in yogurt serve immediately.

Just a hint.. anytime sour cream is used in a recipe you can replace with yogurt but yogurt has a slightly zingy taste to it.
You can make an easy type cream sauce:
In a bowl mix sour cream (or yogurt if you like the taste), crushed garlic, salt pepper, parmesan cheese and set to blend flavors.
Cook chopped spinach and drain.
While spinach is hot mix in room temperature cream mixture.
By the way: this makes a good mock alfredo just use hot pasta

1. Thaw spinach in a colander. Squeeze out excess juice and set aside.
2. Heat the olive oil in a large saucepan over medium heat and saute the garlic until slightly browned, about 8 minutes. Add the spinach and saute until spinach is heated completely through, about five minutes.
3. Add sesame seeds and stir for 1 minute.
4. Add the soy yogurt and mix until the yogurt is heated, about 3 minutes. Serve hot.

I have never seen one, cream spinach is made with a bechamel sauce. I cook the spinach with onion and garlic. Then add a medium thick cream sauce ( bechamel ) made with heavy cream. Season this with salt , pepper , and nutmeg. I have seen yogurt used in dressings on hot sandwiches, but to cook the yogurt is not advisable it will curdle.

Believe it or not there is rarely any dairy in creamed spinach, actually sugar which forms a sauce. Since it's whitish in color it was named creamed.
