i typically like to whip up a "fresh salsa" for an appetizer at parties. its not cooked and dark tasting, its much brighter and has really good flavor. also, you dont need to put it in the crock pot or pressure cooker or anything, so it takes less time.
i use the following -
4 large peppers, 1 green, 1 red, 1 yellow, 1 orange
( the green and red work fine alone, but the others give it a little sweetness, which my girlfriend and her friends love, and it adds color for presentation)
4 tomatoes, (cut out the watery middle part and seeds)
1 large onion, white or yellow
3 decent size garlic cloves
a few squirts of lime juice (or one small squeeze of a real lime)
about a tablespoon of cilantro, freshly chopped is better, but you can use dried if you want
1 - 3 jalapenos, depending on how hot you want it, i like it hot, but a lot of my guests dont.
chop it all up, remove the seeds from the peppers (other than the jalapeno, leave it in), and you're all set!

A dozen Roma tomatoes, chopped
1 bunch cilantro, chopped
1 large white onion, chopped fine
1 can of corn, drained
1 jalapeno, chopped
1 tbsp salt
juice of 1 lime
Do not drain the juice, stir it back through the salsa occassionally. Absolutely a winner!!

FETA SALSA
1 can (14-1/2 oz.) tomatoes, drained, chopped
1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
1/4 cup sliced pitted ripe olives or sliced pitted kalamata olives
3 Tbsp. chopped fresh basil
2 Tbsp. chopped green onion
1 Tbsp. fresh lime juice
1 tsp. dried oregano leaves
MIX all ingredients until well blended. Serve with pita chips.

6 plum tomatoes
1 small onion
2 cloves garlic
juice from 1/2 a lemon
1 level tsp. salt
10 sprigs of cilantro
1/2 to 1 jalapeno pepper (to desired spiciness)
Mince all and mix together. Drain excess liquid.

start with a nice firm mango,add jalapenos, diced onions,tomatoes, all diced,salt to taste then add a squeeze of lime and let sit for an hour in the fridge. you get a taste of sweet with the heat.
