According to the Accreditation Council for Graduate Medical Education,
"Duty hours must be limited to 80 hours per week, averaged over a fourweek period, inclusive of all in-house call activities. 3. Residents must be provided with 1 day in 7 free from all educational and clinical responsibilities, averaged over a 4-week period, inclusive of call. One day is defined as 1 continuous 24-hour period free from all clinical, educational, and administrative duties..."
And,
"In-house call must occur no more frequently than every third night, averaged over a 4-week period. 2. Continuous on-site duty, including in-house call, must not exceed 24 consecutive hours. Residents may remain on duty for up to 6 additional hours to participate in didactic activities, transfer care of patients, conduct outpatient clinics, and maintain continuity of medical and surgical care. "

Depends on the residency program. Overall residency in surgery or surgical subspecialties have a tendency to be more rigorous than specialties where there are fewer emergencies or regular work hours for example, pathology or radiology.
Overall though, 80-100 hours/week is the routine. Those work hour rules are soft, with extra hours allowable for non-clinical duties such as dictating or conferences.
Vacations are about 3-4 weeks per year.
The above is for US residency programs, as I am not as familiar with residency programs in other countries, however I would assume it is quite similar.

Eat when you can.
Sleep when you can.
Use the toilet whenever you get the opportunity because you may not get the chance to later.
It's not slavery, but close. It's a whole lot better now than when I was a resident 16 years ago. We routinely worked 30+ hours straight. I would be so tired, I would drive home and not remember how I got there. Every cell in my body was individually tired. It sucked.

they are crazy and although there is a limit to the number of hours they are supposed to work often they end up going over that. plus if u have to be doing research or other work on the side it means that any free time u do get u end up spending doing work at home.
