I love it, but it is so hard to get hold of the in the U.K.

i got a couple of recipes for you good luck to you and i hope it becomes your best answer

Strawberry Liqueur
Categories: Alcohol, Beverages
Yield: 1 pint

1 pt fresh strawberries
2 1/2 c Vodka
1 Vanilla bean
1/2 c Sugar Syrup

Select full colored and plumb berries, avoiding stained baskets (sign of overripe or softened and decayed berries). DO NOT wash until ready to use as water causes mold to form.
Rinse berries and place in a mixing bowl, lightly crushing to release flavor. Add vodka and vanilla bean. Stir and store in bottle in cool dark place for 3 weeks. Strain mixture through
dampened cheesecloth squeezing as much juice as possible. Pour back into bottle adding sugar syrup to taste (1/3 to 1/2 cup per pint) and age another 3-5 weeks.
Yield: 1 pint plus


Strawberry Liqueur

2 or 3 large punnets of ripe, juicy strawberries - hulled [feel free to add in more if you have a glut of strawberries]
1 kg granulated sugar
1L of brandy, rum or vodka
large jar with tightly fitting lid

Thoroughly clean and sterilise your jar.

Place approximately 1/4 of the sugar in the jar, shaking so that it covers evenly. Add approximately 1/3 of the strawberries, pushing them down firmly. Continue layering, you should end on a layer of sugar.

Pour over the spirit, cover tightly, and leave in a dark place for three months (or more, if you have boundless patience). Shake gently occasionally - all of the sugar will dissolve eventually, so don't panic if it remains undissolved for a few weeks.

Decant into a dark sterile bottle (hang onto the bottle the spirit came in - you'll need another one too).

You can use the liqueur in cocktails, in desserts, or just straight. Its very smooth and drinkable. I never bothered to work out how the sugar affected the overall percentage, so be careful how much you drink as it's rather strong!

The strawberries can be used in trifles or eaten with some whipped cream. Make sure that noone is driving though!!! They will look rather odd, but taste fantastic.

I did this by mistake! I went out to a 'pick your own' farm quite a number of years ago and bought enough strawberries to make a strawberry wine. When I got home I discovered that I didn't have a vessel large enough to hold all the strawberries and liquid. So I just put them in a big bowl, sealed them in and put them in the cupboard under the sink with the intention of getting a big enough bowl and sorting them out in a couple of days. I didn't add any yeast to ferment them.
It must have been about six months later that I rediscovered them! There was a 'mat' of mould over the top which was solid and rolled off. The aroma was incredible! Like all of the freshest strawberries you could ever smell. The liquid was clear. The flavour was incredible!
I can't say that it was really a liqueur, but I would definitely try to do it again.

HOW TO MAKE STRAWBERRY WINE

Materials:

Extracted strawberry juice from fully ripe berries
Brown sugar
Yeast

Procedure:
1. Remove calyx ( stem ) from fruits and wash well in clean water.
2. Extract juice from fully ripe berries by pressing the fruits manually or with the aid of a blender.
3. For every four cups of extracted juice, add 1 cup of water and 2 ½ cups of brown sugar.
4. Bring the mixture to boil then cool.
5. Add ¼ teaspoon of yeast to every 8 cups of the mixture.
6. Place in suitable containers and allow to ferment for two weeks.
7. Siphon the wine and boil for about 10 minutes.
8. Cool and pack in sterilized bottles.
9. Seal and allow to age for 8 months to one year or longer if desired.
